    From plain kulchas to Amritsari varieties, these breads are always impressive. One popular version is Aloo Kulcha, which is stuffed with spiced mashed potatoes. It pairs beautifully with pickle, chutney, curry, or even vegetables. However, many people struggle to achieve the perfect Aloo Kulcha at home. If you’ve faced this challenge, we’ve got you covered!     1. Prepare the Dough

    To begin, prepare the dough by combining flour, sugar, salt, curd, and baking soda in a bowl. Mix well, then slowly add lukewarm water to knead a soft, smooth dough.

    2. Let the Dough Rest

    Once the dough is ready, it’s crucial to let it rest. Resting the dough enhances elasticity, making it easier to roll without cracking. Allow the dough to rest for at least 30 minutes.

    3. Keep It Covered with a Wet Cloth

    Always cover the dough with a damp cloth while it rests. Lightly oil the surface of the dough, then cover it with a wet cloth to prevent it from drying out.

    4. Prepare the Stuffing

    For the stuffing, take boiled potatoes and mash them thoroughly. Ensure there are no lumps, as poorly mashed potatoes can tear the kulcha while rolling.

    5. Add Spices

    Enhance the flavour of your Aloo Kulcha stuffing by adding spices. Mix mashed potatoes with finely chopped green chillies, onions, pomegranate seeds, carom seeds (ajwain), roasted cumin powder, and salt to taste. Blend everything well and set it aside.

    6. Make the Kulcha

    Divide the dough into equal portions and roll them into balls. Cover the balls with a cloth. Take one ball, roll it slightly, and place the potato stuffing in the centre. Fold the edges to seal and roll again. Sprinkle chopped coriander and black sesame seeds on top, then roll lightly to press them in.

    Heat a pan and lightly apply water to one side of the kulcha. Place it on the pan with the water-coated side facing down. Cook for a few seconds, then flip and cook the other side directly on the flame for a charred effect. Alternatively, cook on a medium heat using the pan.

    Brush the hot kulcha with butter and serve it alongside your favourite curry or vegetable.

No party is complete without good food and with the rise of quick food delivery platforms, many people do not stock food items in advance and place orders during the party time, as required. Several delivery platforms such as Blinkit, Swiggy, and Zepto shared data on food orders during New Year’s Eve. Take a look:

    Blinkit CEO Albinder Dhindsa revealed the biggest party order was placed from Kolkata worth Rs 64,988.

    Many people hopped on the ‘twelve grapes for luck’ trend. Blinkit CEO shared that grapes are one of the highest-ordered items on the platform.

    Some of the highest party snacks orders included 2,34,512 packets of aloo bhujia, 45,531 cans of tonic water and 6,834 packets of ice cubes. This was followed by 45,531 bottles of mineral water, 22,322 Partysmart and 2,434 Eno.

    Zepto CEO Aadit Palicha also revealed a high demand for ice cubes – 3,345 ice cube orders per hour and counting. 

    Sharing more fun insights on party snacks, Swiggy Instamart revealed that blue Lay’s lead the pack against green, orange, red, and yellow. They also reported a “2.21 lakhs chips order.”

    The top 5 trending searches on Swiggy Instamart were milk, chips, chocolate, grapes, and paneer. 

    Along with party snacks, Swiggy shared some of the most ordered food items – 2,96,711 cakes and 116099 burgers. Further, 2,24,590 users ordered pizza for the New Year’s party.

    1. Prepare Potatoes

    Start by washing and cleaning the potatoes. Cook them in a pressure cooker with water until soft. Let the steam release naturally and set the potatoes aside.

    2. Prepare Green Paste

    In a blender, combine spinach, coriander leaves, ginger, green chillies, and whole spices like cinnamon sticks, green cardamom, black cardamom, black peppercorns, and kasuri methi. Add a little water and blend into a smooth paste.

    3. Make Gravy Paste

    Heat mustard oil in a pan. Add spices like saunf, jeera, hing, red chilli powder, coriander powder, and salt. Stir well, then pour in the spinach mixture. Cook until the paste thickens. Once the potatoes have cooled, roughly crush them and add to the pan. Adjust the water to your preferred consistency and simmer until the gravy thickens. Adjust the spice levels, garnish with ginger and green chillies, and serve hot with freshly made pooris!
