    Biryani is one of the most beloved dishes in India. Various regions in the country have their own versions of this delicacy and they take great pride in their distinctive ingredients, flavours and techniques. Recently, a video showing a Texas-based vlogger attempting to make a Kerala-style biryani received a lot of attention on Instagram. It was shared by @barefoodtim (Tim Laielli). The vlogger begins by collecting some whole spices and other key ingredients together, including star anise, cloves, green cardamom, cinnamon, cumin seeds, red chillies, black peppercorns, etc. He blends them together to make his own biryani masala.

    He is then seen slicing onions to prep them for later use. He adds ghee to a saucepan and adds cashew nuts and what looks to be raisins to it. He sautees them together and takes them out after some time. He adds the onions to the same vessel and cooks them for a few minutes. Later, he adds the prepared masala to the pan, along with chicken pieces. He flavours them with more spice powders and flips them over till they’re well-coated. Next, he adds chopped tomatoes, salt and curd to the pan. He covers it and allows the chicken to cook well.

    In the meanwhile, he cooks rice with a handful of whole spices for additional aroma. He returns to the vessel with the chicken and sprinkles some masala and mint leaves on it. He adds a layer of cooked rice on top of it. He garnishes this layer with sauteed onions, cashew nuts and raisins. He adds another layer of rice, followed by another round of garnish. In the end, he is seen serving himself the biryani and tasting it. He declared that every bite was “bursting with flavour.” Watch the complete video below:

    A group of friends dining at a popular restaurant in Hyderabad made a shocking discovery when they allegedly found a half-burnt cigarette in their chicken biryani. According to the video posted on X (formerly Twitter), the incident seemingly occurred at Bawarachi, a well-known restaurant in Hyderabad, sparking concern over food safety. The video of the incident was posted on the social media platform by user Vineeth K on November 25. In the footage, a group of nearly 10 men can be seen sitting at the table, with half-eaten food in front of them. One of them lifts a plate of biryani to show the burnt cigarette, while the others angrily shout at the restaurant staff.

    As the video continues, the situation escalates with staff members surrounding the table while the men continue to voice their complaints. The heated exchange caught the attention of other diners, who watched in shock. The group can be heard expressing their disgust and frustration.

    How To Make Potli Biryani At Home | Potli Biryani Recipe

    Making potli biryani at home is quite simple. To begin with, heat oil in a pan and add whole spices, ginger-garlic paste, and onions. Mix well. Then, add in tomatoes, carrots, beans, dry spices, curd, and salt. Give it a good mix and add chopped coriander, mint, and water. Cover the pan with the lid and allow it to cook for a few minutes. Now, place two banana leaves on top of each other and start assembling the biryani by adding one layer of boiled basmati rice. After this, add a layer of the prepared vegetable gravy, birista (fried onions), coriander, and a final layer of rice. Top it with kesar milk, birista, and coriander, fold it as a parcel, and tie it with a kitchen thread. Place the parcel in a hot steamer for about 10-12 mins. Serve hot and enjoy!

    What Is Pulao? Can Pulao Be Non-Vegetarian?

    According to ‘Indian Food Tradition: A Historical Companion’ by food historian K.T Achaya, Mahabharata mentions an instance of rice and meat cooked together, which is referred to as ‘pulao’ or ‘pallao.’ The Oxford Dictionary weighs in; pulao is quite similar to the Turkish ‘pilaf,’ and this variant includes meat in the dish.

    However, in India, the vegetarian version of pulao gained more popularity, making it a staple in the cuisine. A traditional Indian pulao is a one-pot meal made using aromatic rice, ghee, spices, dry fruits, and vegetables of your choice.

    Veg Biryani Vs. Pulao: What Are The Differences?

    1. Origin:

    As mentioned earlier, biryani has a Persian origin and comes from the terms ‘birian’ and ‘birinj.’ Whereas, if we go by historian K.T Achaya’s theory, pulao may find its origin in ancient India.

    2. Cooking Process:

    Pulao is a one-pot meal, where all the ingredients are cooked together and then boiled to perfection. Whereas to make biryani, you need to use the ‘dum’ technique to infuse all the flavours together. Here, the vegetables/meat and rice are cooked separately and then put on dum for flavour and texture. However, there’s a variation called kacchi biryani, where the rice is cooked with all other ingredients, following the one-pot cooking process.

    3. Ingredients:

    Both veg biryani and pulao need rice, spices, and vegetables. But if you dive in deep, you will find a huge difference in the spice concoction. While biryani spices are strong and aromatic, spices used for pulao are milder. Experts prefer using whole spices to prepare pulao.

    4. Taste:

    To put it simply, biryani makes for a wholesome meal by itself. You can have it as is or pair it with condiments like raita, salan, or burani to cleanse the palate. Whereas, for a traditional pulao, you need some gravy-based dish on the sides to put together a complete meal.

    5. Texture:

    Pulao typically has a more uniform texture, with the rice grains remaining separate from each other. Whereas, due to the heavy use of spices, biryani often gets mushier and binds together all the vegetables and spices.
