    The recipe for this unique vada pav wrap was shared by Chef Neha Deepak Shah on her Instagram page. Start by preparing the batata vada masala for the wrap. For this, heat oil in a pan and add hing, garlic cloves, ginger, mustard seeds, curry leaves, green chillies, haldi, coriander, boiled potato, and salt. Mix well and keep it aside. Next, prepare a slurry by mixing besan with water and salt. Once done, pour a ladleful of the batter onto a heated tawa and spread it evenly. After it’s semi-cooked, take a knife and make a slit from the centre to one end. Now, place the aloo mixture on one end, green chutney on the other, followed by imli chutney and grated cheese. Sprinkle garlic chutney over it and fold all the edges one over the other, forming a wrap. Your vada pav wrap is now ready!

    2. Fry Spices: Heat neutral or olive oil in a deep pan. Add chopped garlic, cinnamon, black cardamom, cloves, black pepper, star anise, fresh coriander, onions, and ginger. Fry until fragrant and slightly browned.
    3. Remove Spices: Carefully remove the fried spices from the oil and set aside.
    4. Fry Garlic and Sesame Seeds: In the same oil, fry chopped garlic and sesame seeds until golden brown.
    5. Combine with Chili Flakes: Pour the hot oil over the chilli flakes, salt, and sugar mixture. Stir vigorously to coat the chilli flakes with the oil.
    6. Let it Cool: Allow the oil to cool completely before transferring it to a clean, airtight container.

Now scrape the hard skin off the drumsticks. Cut the drumsticks into half and put them in a bowl. Now add chickpea flour (besan), rice flour, salt, chilli powder, and turmeric powder, over the cut moringa drumsticks and mix well. Add a little water to seal the flour around the sticks. Mix well so that the spices and ingredients are well coated over the drumsticks. In a pan, heat some oil on medium flame. Now add the coated drumsticks and cook them until golden brown. 

    Remove from heat on kitchen paper to absorb excess oil. Sprinkle some chaat masala over the moringa chips and enjoy!
