    Take 1.5 cups of moringa flowers and wash them thoroughly. Pat dry them and chop finely or at least small enough to incorporate them in cutlets.

    2. Prepare Veggies and Spices

    Take an onion and green chillies and finely chop them. Transfer them to the bowl along with moringa flowers. Now add grated coconut, turmeric powder, garam masala, salt, tamarind extract, and besan (to bind) and mix all the ingredients. 

    3. Make Cutlets

    Mix everything well with your hands and shape the mixture into small balls or cutlets. The cutlets won’t be tightly bound like potato cutlets so be careful while handling them. Shallow fry on both sides until golden and serve hot!
