Albania Sees High Demand For Rare And Expensive Donkey Cheese – Heres What Makes It Special

“Donkey milk has the taste of love,” said Fatiko Basha as she caressed her favourite, Liza, before collecting the animal’s milk. It also makes what is reputed to be one of the most expensive cheeses in the world.

On a small farm in Albania’s southern Gjirokaster region, Basha and her husband Veiz use donkey milk to make cheese, curd or whey.

For thousands of years, it has been praised for its numerous virtues.

The legend says that Cleopatra immersed herself in donkey milk baths that guaranteed her beauty and youth.

Legends aside, it “heals children, is a natural remedy for respiratory tracts, allergies and the immune system”, Fatiko Basha said.

She cleaned one mother’s teats, stroking the animal to try to get her milk flowing, as the foal, Xhoia (“Joy” in Albanian), looked on.

“Regardless of their age, donkeys are like children,” Veiz said with a smile.

They need a lot of affection to produce milk, he said as the donkey started to bray to get his attention.

The donkeys have to be lactating of course, and milking starts when the foal is three months old.

Donkey milk became popular during the Covid-19 pandemic, which was when the Bashas decided to bring several to their farm.

Before long they were selling their milk not just in Albania but in Greece, Montenegro and North Macedonia.

Now, with around 30 females and four males, they plan to enlarge the herd from January, taking advantage of the natural pastures at the foot of the Gjirokaster mountains.

Nor are the Bashas the only ones tapping into the market: across the region, there are around fifteen donkey farms.

    – ‘White gold’ –

Donkey milk may be as exceptional as its producers claim, but it is also rare.

You can expect to get only half a litre of milk (a little less than a pint) per animal per day.

That scarcity is what makes it so expensive, costing between 50 and 60 euros ($53 to 63) per kilo.

“Donkey milk is white gold,” said Veiz Basha: hard to harvest, but every drop makes you happy.

For the past year, the Basha family has been producing creamy homemade cheese, as well as curd and whey, buying additional milk from local farmers.

“There is a high demand for donkey cheese, which is difficult to prepare,” said their daughter Xhiko Basha, who prepares cheese for a local restaurant at her home in the nearby village of Lazarat.

And if the milk is expensive, the cost of the cheese is even higher: to produce just one kilo of cheese you need at least 25 litres of donkey milk — or more than 1,000 euros’ worth.

Sold at over 1,500 euros a kilo, it has the reputation of being one of the most expensive cheeses in the world.

“The French say that a meal without cheese is a beauty missing an eye, but donkey cheese is really the icing on the cake,” said Jaco Meci, a veterinarian who also produces donkey cheese that features on the menu of Tirana restaurants.

Customers prefer it fresh, 48 hours after it has been prepared, said Elio Troque, owner of the Oxhaket restaurant in the capital.

“Expensive but very tasty, it is the perfect accompaniment to a meal with good wine,” he added.

    – A ‘beauty secret’ –

In her small workshop, pharmacist Fabjola Meci does not ferment milk to make cheese, but prepares a range of donkey milk cosmetics that have also gained in popularity in recent years.

“Donkey’s milk is a real beauty secret,” the 24-year-old said as she hurried to finish a final order of an ultra-soft day cream.

Meci has launched her own brand, Leva Natural, and with the festive season approaching she said she hoped to soon be able to export her donkey-milk products worldwide.

And she knows how to sell it, insisting: “The donkey’s milk face cream is a delight… Once you’ve used it, it’s hard to give it up.”

Amla is bursting with vitamin C, which is crucial for maintaining eye health. A 2020 study in the journal Nutrients highlights that vitamin C plays a major role in reducing oxygen levels within the eye, preventing oxidative damage. Consultant nutritionist Rupali Datta adds, “Amla’s natural antioxidants protect against free radicals, nourish the body from within, and strengthen the immune system.” So, adding amla to your routine can keep your eyes looking brighter and healthier for years to come.

    3. Supports Better Vision

Dealing with high spectacle power? Amla might help. Rich in vitamin A, it supports retinal health, which can improve both day and night vision. Regular consumption could make it easier to see in dim lighting and may even help reduce the severity of night blindness caused by vitamin A deficiency.

    4. Helps Prevent Eye Infections

Eye infections like conjunctivitis are annoying and painful, but amla’s antibacterial and anti-inflammatory properties can help. Whether you consume amla juice or use amla-based eye drops, it can soothe irritation, reduce redness, and protect your eyes from common infections.

    5. Slows Down Age-Related Vision Problems

As we grow older, vision problems like macular degeneration can creep in. According to a research paper published in the Open-Access Impact Journal on Aging, amla’s high vitamin C content and powerful antioxidants, including polyphenols, can help fight the free radicals responsible for age-related eye damage. • Fortnite players ‘tricked’ into unwanted purchases are starting to get refunds. Here’s how to apply

Fortnite players ‘tricked’ into unwanted purchases are starting to get refunds. Here’s how to apply

NEW YORK — U.S. consumers who were “tricked” into purchases they didn’t want from Fortnite maker Epic Games are now starting to receive refund checks, the Federal Trade Commission said this week.

Back in 2022, Epic agreed to pay a total of $520 million to settle complaints revolving around children’s privacy and payment methods on its popular Fortnite game. The FTC alleged the video game giant used deceptive online design tactics to trick Fortnite players, including children, into making unintended purchases “based on the press of a single button.”

Consumers could be charged while doing something as simple as attempting the wake the game from sleep mode, for example, or by pressing a nearby button when trying to preview an item, the agency said. The FTC also accused Epic of blocking some users who disputed the charges from accessing the content they purchased.

Beyond a $275 million fine related to collecting personal information on players under the age of 13, the settlement included $245 million in customer refunds. Now, the first batch of those refunds are being sent out.

On Monday, the FTC announced it was sending over 629,00 payments to eligible customers who submitted claims. About half of those refunds are PayPal payments, which should be redeemed within 30 days, and the rest are checks, which should be cashed within 90 days.

The average refund is about $114, the FTC noted. This first round of payments amounts to a total of more than $72 million, according to the agency — leaving about $173 million left to be distributed.

Impacted consumers can still apply for a refund online. People who are eligible for these payouts include Fortnite players who were charged in-game currency for items they didn’t want or saw their account locked after complaining to a credit card company about wrongful charges between January 2017 and September 2022 — as well as parents whose child made charges on their credit cards without their knowledge from January 2018 through November 2018.

You can learn more about applying for a refund on the FTC’s website. The deadline for submitting a claim is January 10, 2025.

At the time the settlement was announced in December 2022, Epic said it accepted the agreement because it wanted “to be at the forefront of consumer protection and provide the best experience for our players.” The Cary, North Carolina-based added that it was already rolling out changes “to ensure our ecosystem meets the expectations of our players and regulators, which we hope will be a helpful guide for others in our industry.”

Viral: Man Drops 31 Kg In 1.5 Years While Enjoying “Outside” Food, Heres What Nutritionist Says

Imagine indulging in junk food and still losing weight – sounds like a dream come true, right? Well, for one man, it is a reality, and his transformation post is now going viral on Reddit. The post features impressive before-and-after photos of his weight loss journey, with his face concealed behind emojis. But the dramatic change in his physique is enough to inspire anyone. According to the man, he shed 31 kilos in just 1.5 years. Starting at 120 kg, he now proudly weighs 89 kg. In his note, the man revealed his strategy: sticking to a strict diet during weekdays while treating himself to “outside” food on weekends. A self-proclaimed foodie, he confessed he could not resist his love for good food but found a balance that worked for him.

In his note, the 28-year-old man wrote, “Took 1.5yrs to reach this. I have been eating outside food as well on weekends because I have been a foodie and can’t live without it. But weekdays have been a strict diet of being under 2000cals with atleast 120g protein vegetarian diet.”

This journey has left many people wondering whether this is a healthy way to lose weight. According to Consultant Nutritionist Rupali Datta, if the man managed to lose weight without resorting to crash dieting, there is no harm in his approach. She explained, “If he has achieved his health goals and done it without crash dieting while enjoying his food, it’s good. That’s the only way he can sustain it. Even as nutritionists, we do encourage patients to stay as close as possible to their normal lifestyles. At the end of the day, you have to work out a system within that.”

Nutritionist Rupali Datta also raised concerns about the man’s protein intake, calling it “not a good idea” for the long term. She added, “Regarding this case, the quantity of protein consumed is not a good idea for the long term. Further, if he has taken a year and a half to lose that amount of weight, he has obviously not crash-dieted.”

Talking about targeted weight loss and a healthy lifestyle, Rupali Datta shared, “As nutritionists, what we follow is a targeted weight loss of 500 grams to 1 kg a week. The calorie count is a small part of the whole process. The main thing is to teach the person to eat better, to imbibe better habits, and to do it in such a way that it can be followed lifelong. If you tend to put on weight, and then revert to your old habits, it is all going to come back. We never recommend crash dieting.”

  • Think Green Juice Is Super Healthy? Heres What You Need To Know Before You Sip

Think Green Juice Is Super Healthy? Heres What You Need To Know Before You Sip

Let’s be real – who doesn’t love a glass of fresh juice? It’s quick, easy to make, full of nutrients, and gives you that energy boost. Green juice, in particular, has earned a reputation as a health powerhouse. Packed with vitamins, it’s often seen as a must-have for a healthy diet. Plus, it’s known to help detox the body. But is it all it’s cracked up to be? If you’ve been sipping on green juice thinking it’s the ultimate health drink, you might want to keep reading. Nutritionist Shalini Sudhakar recently dropped some surprising truth bombs about this popular beverage on Instagram.
Also Read: 5 Amazing Reasons To Sip On Coriander (Dhania) Juice On An Empty Stomach

Can Green Juice Be A Healthy Part Of Your Diet? Here’s What You Need To Know:

Shalini says the health benefits of green juice depend on how it’s made. If you’re using raw leaves, it could actually be doing more harm than good. While green leafy veggies are loaded with nutrients, they also contain anti-nutrients like oxalate. When raw, these anti-nutrients aren’t broken down. Shalini explains, “When you consume a glass of raw green juice, you’re also consuming a lot of anti-nutrients along with it.” This can mess with your gut and liver health. So, she recommends cooking the greens before juicing them for maximum benefits.

    Watch the full video here:

Does Cooking Leafy Greens Really Destroy Their Nutrients?

Here’s where a lot of people get it wrong: cooking leafy greens doesn’t zap all the nutrients. In fact, Shalini points out that cooking actually helps remove those pesky anti-nutrients. Once the anti-nutrients are gone, your body can absorb the good stuff way better. A study from the National Institutes of Health (NIH) even found that cooking leafy greens boosts vitamin C content, especially in Indian spinach. So if you’ve been avoiding cooked greens, thinking you’ll lose all the nutrients, it’s time to rethink that.

How Often Should You Drink Green Juice?

Even though green juice is packed with good stuff, moderation is key. Shalini suggests drinking it about three times a week to get the most benefits. By sticking to this 3-day routine, your body can absorb all the nutrients without overloading on anti-nutrients. Want to try a healthy green juice recipe? Here’s one to get you started.

  • Is Lemon Water Your Go-To Morning Drink? Heres Your Guide To The Dos And Donts

Is Lemon Water Your Go-To Morning Drink? Heres Your Guide To The Dos And Donts

We all have certain rituals we follow every morning. These might include eating a handful of soaked nuts, drinking tea, or enjoying a bowl of fruit. Another common morning habit is drinking lemon water on an empty stomach. Lemon, a powerhouse of vitamin C, is known for its numerous health benefits. However, there are specific dos and don’ts to keep in mind when consuming lemon water in the morning. Did you know about this? Recently, Ayurvedic and gut health coach Dimple Jangda shared these tips on her official Instagram handle to help you make an informed choice while sipping your lemon water.
Also Read: What Happens If You Drink Coconut Water, Lemon Water, Ginger Shot Every Day

Here Are The Dos And Don’ts Of Drinking Lemon Water On An Empty Stomach:

1.Never Consume It In A Copper Or Aluminium Glass

Dimple suggests that one should never consume lemon water in a copper or aluminium glass. This is because these heavy metals can easily leach into the water, and eventually enter our bloodstream. When this happens, our srotas – hollow channels in the body – can get blocked and cause toxic buildup in our liver and kidney.

    2. Do Not Consume If You Have Skin Issues

Did you know you should avoid lemon water if you have skin issues? According to the coach, lemon has a high citric content, which is detrimental to skin disorders. Consuming too much of it can cause skin irritation and redness. So, if you have issues like psoriasis, eczema, or rosacea, you must avoid consuming lemon water in the morning.

    3. Do Not Consume If You Have Acidity

Consuming lemon water in the morning is also unsuitable for people with acidity. Dimple says that lemon water can increase acid production in the body, thus worsening your symptoms. You should also abstain from drinking lemon water if you have gastroesophageal reflux disease (GRED).

    4. Drink It Immediately

As we all know, lemon water is an excellent source of vitamin C. However, if you do not consume it immediately, you can lose out on it. Jangda explains that vitamin C in water degrades over time, which is why you should avoid preparing it in advance. If not immediately, try to consume it within a few minutes after making it to reap its maximum benefits.

    5. Do Not Add Honey

Another thing to keep in mind while drinking lemon water in the morning is not to add honey. According to the nutritionist, adding honey to it can be detrimental to your health in the long run. It can cause a spike in blood sugar levels and may even affect your oral health. So, it’s best to avoid adding it altogether or reduce the quantity.

    Can Diabetics Have Dates?

As per Dr. Mukta Vasistha, H.O.D, Nutrition and Dietetics, Sir Ganga Ram Hospital, everyone can eat dates. Not one but at least two to three, depending on your blood sugar levels. The reason why diabetics are asked to avoid high-sugar foods is because it might shoot their blood sugar levels. In fact, diabetics can benefit from dates since they are high in fibre. However, make sure to consume it in moderation.

So, Is Date Sugar Healthier Than White Sugar?

To understand whether or not regular white sugar is healthier than date sugar, let’s first find out the calorie content in each. As per nutritionist Amita Gadre, nine grams of regular table sugar gives us about 20 calories – a high glycemic index of around 65 and spikes blood sugar quickly. The same quantity with date sugar – which has a similar calorie count of 15 to 20 calories – has a lower glycemic index usually around 42 – meaning it won’t cause as sharp a blood sugar spike as regular sugar. However, the nutritionist also warns that just because something has a low glycemic index, doesn’t mean it can be consumed without any moderation.

But first, let’s explore what pita bread is, what it’s made from, how to pair it, and-most importantly-how to make it soft, fluffy, and delicious in your own kitchen.

    What is Pita Bread?

Pita bread is a round, flatbread traditionally made from wheat flour, water, and yeast. Its most iconic feature is the “pocket” that forms when the dough puffs up during baking. This pocket makes it an ideal choice for stuffing with fillings, dips, or sandwiches. Pita bread is an integral part of Middle Eastern, Mediterranean, and North African cuisines, but its appeal has spread worldwide. Its light, airy texture, slightly chewy bite, and neutral flavour make it a versatile addition to any meal. It is commonly paired with hummus dip.

What is Pita Bread Made Of?

The basic ingredients for pita bread are simple, and they come together to create a soft, pillowy dough. Here’s what you’ll need to make your own pita bread:

    • All-purpose flour: This is the main ingredient that forms the structure of the bread.
    • Instant dry yeast: Yeast is what makes the dough rise and gives the bread its airy texture.
    • Caster sugar: The sugar helps activate the yeast and enhances the bread’s flavour.
    • Salt: Salt brings balance to the flavour of the dough.
    • Warm water: Warm water is essential for activating the yeast and helping the dough come together.
    • Olive oil: Olive oil adds richness and helps keep the bread soft.

Tips To Make Soft, Fluffy Pita Bread

The key to making the perfect pita is a soft, well-hydrated dough and careful attention during the cooking process. Follow these important steps for soft, fluffy pita bread every time:

Make the Dough Soft: The most crucial step is to ensure your dough is super soft. When you knead the dough, it should be elastic and smooth, but not sticky or dry. If it feels too stiff, add a little more warm water to achieve a soft, supple dough that will rise beautifully.

Allow the Dough to Rise: Once you’ve kneaded your dough, cover it with a damp cloth and let it rise for about 1 hour, or until it doubles in size. This step allows the yeast to work its magic, giving the dough a light texture.

Rest Before Cooking: After dividing the dough into portions and rolling them out, it’s important to let the dough rest for 15-20 minutes before cooking. This rest period allows the gluten to relax and results in a softer, more pliable pita that will puff up properly in the pan.

Rotate the Pita for the Perfect Puff: When cooking the pitas on a hot tawa (griddle), it’s essential to flip the bread every 15-20 seconds. This technique ensures even cooking and helps the pita achieve its signature puff. Keep rotating the pita until it inflates like a balloon.

How To Make Soft Pita Bread I Homemade Pita Bread Recipe:

Here’s a simple recipe to make your own fluffy pita bread at home:

    1. Mix the Dough: In a bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and olive oil, kneading the mixture into a soft dough. If the dough feels stiff, add more water until it becomes smooth and elastic.
    2. Knead the Dough: Knead the dough for 10-12 minutes until it’s smooth and elastic. Cover the dough with a damp cloth and let it rise for about 1 hour, or until it doubles in size.
    3. Roll Out the Dough: Punch the dough down, divide it into equal portions, and roll them out on a floured surface. Place the rolled dough on a tray, cover it with a damp cloth, and allow it to rest for 15-20 minutes.
    4. Cook the Pitas: Heat a tawa or griddle over medium heat. Place one rolled pita on the tawa, and cook until slightly puffed on one side. Flip it over and continue flipping every 15-20 seconds until the pita inflates and turns golden.
    5. Enjoy: Your fluffy pita pockets are ready to be filled with your favourite ingredients or served with dips!

What To Pair With Pita Bread

Pita bread is incredibly versatile, and its soft texture makes it perfect for a variety of dishes. Here are some delicious ways to pair homemade pita bread:

    • Stuffed Pitas: Fill pita pockets with your favourite ingredients for a quick and satisfying meal. Some popular fillings include falafel, shawarma, grilled vegetables, and hummus. For a fresh twist, add leafy greens, pickled vegetables, or tzatziki sauce.
    • Dips: Pita bread is an excellent accompaniment to dips like hummus, baba ganoush, tzatziki, and muhammara. Simply tear off pieces of the pita and scoop up your dip for a delightful snack or appetizer.

    • Wraps: Use your homemade pita as a wrap for grilled meats, vegetables, or cheeses. It’s an excellent alternative to tortillas and adds a slightly chewy, satisfying element to any wrap.

  • Apex the $45M stegosaurus is on display in New York. Here’s what scientists hope to learn about it

Apex the $45M stegosaurus is on display in New York. Here’s what scientists hope to learn about it

NEW YORK — The most expensive dinosaur fossil ever discovered will be on view in New York starting this weekend, American Museum of Natural History officials announced Wednesday.

The giant stegosaurus fossil, dubbed “Apex,” is 11 feet (3.3 meters) tall and 27 feet (8.2 meters) nose to tail. The display will start in a giant atrium at the museum’s entrance before being moved to the museum’s existing fossil halls next year.

The museum also confirmed the identity of the philanthropist who purchased Apex. Billionaire hedge fund manager and longtime museum donor Ken Griffin bought it at an auction in July for $45 million, the most ever paid for dinosaur remains. Sean Decatur, president of the American Museum of Natural History, said that Griffin approved a long-term loan of Apex, as well as allowing scientists to take samples from the fossil for analysis.

“This partnership allows Apex to have pride of place at a museum world-renowned for its dinosaur collection and for its longstanding leadership in paleontology and, even more exciting, enables us to pursue specialized Stegosaurus research centered around this extraordinary and scientifically important specimen,” Decatur said in a statement Wednesday.

Of the more than 80 stegosauri made available to scientific institutions, very few are substantially complete, the statement said. Apex is the most complete specimen ever found, Decatur said. With about 80% of its 320 bones preserved, it is miraculous for creature that has been dead for 150 million years. The specimen is also prized by scientists because it is estimated to have died at a relatively old age, and it could reveal insights into stegosaurus metabolism and bone growth.

Scientists will make CT scans of the internal structures of the dinosaur’s skull and analyze a small sample extracted from one of its giant thigh bones, the statement said.

“As exciting as is it is to have this dinosaur on display, it is even more exciting to have the opportunity to study it and make important scientific data available for research,” said Roger Benson, who curates the American Museum of Natural History’s fossil amphibians, reptiles, birds and plants.

The museum’s paleontologists have a long record of breaking ground in dinosaur research, including identifying the first dinosaur eggs and early evidence of dinosaur feathers, the statement said.

Commercial paleontologist Jason Cooper discovered in Apex on his land near Dinosaur, Colorado, on the Utah border near Dinosaur National Monument.

Griffin’s successful $44.6 million bid for Apex over the summer set a record for dinosaur remains, beating out the $31.8 million paid for “Stan,” the remains of a Tyrannosaurus rex sold in 2020. Like Apex, the Stan fossils were purchased by a private individual with plans to make it available to the public. The T. rex has been slated to be on display in Abu Dhabi, in United Arab Emirates, at a museum that opens in late 2025.

Quake prompts brief tsunami warning on the West Coast. Here’s what to know about tsunamis

ANCHORAGE, Alaska — The powerful earthquake that struck in Northern California on Thursday prompted a brief tsunami warning affecting about 5 million people along long stretch of the West Coast — from Northern California to Oregon — before being canceled. Here are some things to know about tsunamis:

A tsunami, a word that comes from the Japanese characters for harbor and wave, is a series of extremely long waves caused by the sudden displacement of the ocean, according to the National Weather Service.

“Most tsunamis, and the largest, result from earthquakes on reverse faults. These tsunami-generating earthquakes originate mainly in subduction zones, where tectonic plates collide and one is forced under the other,” the National Oceanic and Atmospheric Administration said.

If this is large enough and closer to the ocean floor, the energy from the earthquake can cause the ocean floor to suddenly rise or fall. “This sudden vertical displacement of the ocean floor is what typically sets a tsunami in motion,” NOAA said.

“Tsunamis radiate outward in all directions from the point of origin and can move across entire ocean basins,” the service says.

When the waves reach land, they can cause coastal flooding, and the powerful currents can last several hours or days.

The weather service calls a tsunami as “one of the most powerful and destructive natural forces.”

Tsunamis that cause damage or death near earthquakes occur about two times a year, according to the Global Historical Tsunami Database.

A tsunami racing across an ocean and causing damage or deaths more than 620 miles (1,000 kilometers) away happens about twice a decade.

Tsunamis can occur in any ocean, sea or large body of water. But certain areas are prone to tsunamis because of their proximity to the source and other factors, such as depth and the shape of the ocean floor.

The database says between 1900 and 2015, there were 754 confirmed events. Of those, 78% were in the Pacific Ocean. According to the database, Japan has had the most tsunamis since 1900, followed by Russia and Indonesia.

A magnitude 9.2 temblor, the second most powerful earthquake ever recorded globally, caused widespread damage in the Anchorage area in 1964 and killed 131 people, including some in Oregon and California by the ensuing tsunami.

In 2004, a magnitude 9.1 earthquake occurred off Sumatra, an Indonesian island in the Indian Ocean. It generated a tsunami that was as high as 167 feet (51 meters), causing an estimated 230,000 deaths.

Another magnitude 9.1 earthquake struck in Japan in 2011, creating a tsunami with waves reaching 1,272 feet (39 meters). The tsunami caused about 18,000 deaths and prompted a nuclear power plant accident.
