    The consumption of matumbo or tripe has risen in the past years, despite concerns from nutritionists that it has lower nutritional value compared to other meats, and is associated with an increased risk of obesity and cardiovascular diseases.

    A majority of the sellers say the harsh economy has affected household spending, pushing up consumption of tripe. Data from the latest Economic Survey shows that volumes consumed stand at 74,000 metric tonnes.

    Danson Wanderi, 42, a butcher in Nairobi’s Kibera, attests to the growing demand at his butcher shop, which is also strategically located next to a bar.

    “Over the past few months, I’ve seen a steady increase in the sale of tripe,” says Mr Wanderi. “On average, I sell around 25 kilos daily, which adds up to roughly 160 kilos a week. By the end of each business day, most of the stock is sold out, and I restock from a nearby slaughterhouse daily.”

    The low price of tripe, at Sh300 per kilo compared to beef which goes from Sh760 to Sh1,200 for special cuts, makes it more affordable to Kenyan buyers.

    “Many customers are complaining about the tough economy,” says Mr Wanderi, “But those who do come by, especially after drinking alcohol, often believe that eating tripe helps to reduce the unpleasant feeling of drunkenness.”

    In Nairobi’s Makina, Thomas Oduor also operates a butchery.

    Over the years, Mr Oduor has built a loyal clientele. He estimates he sells between 20 and 25 kilos of tripe daily.

    “My customers are a mix of regulars and passersby,” Mr Oduor says.

    “Tripe is affordable here, starting at Sh320 per kilo, which makes it a popular choice, especially among low-income earners.”

    In addition to tripe, Mr Oduor stocks other organ meats such as liver, lungs, kidneys, and heart, which are also popular.

    He even offers a boiling service for those who prefer to buy ready-to-eat tripe but lack the time to prepare it themselves.

    “Many people think tripe takes too long to cook, so they pay an extra Sh50 for us to boil it for them,” he adds.

    Does it have any nutritional value?

    While the demand for tripe continues to soar, pushing its price to Sh314 per kilo compared to Sh250 per kilo five years ago, nutritionists warn about the health risks associated with high intake.

    Kepha Nyanumba, a Nairobi-based nutrition expert, explains that although tripe is an affordable source of protein, it carries significant health risks, especially when consumed in large quantities.

    “Tripe is an animal protein that is considered less nutritious compared to other protein options like beef, seafood, or chicken. However, it does contain collagen, which is beneficial for skin elasticity and joint repair,” he says, adding, “If it must be eaten, it should be consumed in moderation due to the health risks it poses.”

    “Tripe contains high levels of cholesterol, which can be dangerous for people who are already predisposed to conditions like heart disease or stroke,” he says.

    “We live in a time when many people are battling high cholesterol levels, and consuming too much tripe could exacerbate these conditions.”

    Mr Nyanumba also stresses that tripe is rich in saturated fats, which contribute to weight gain and increase the risk of lifestyle diseases such as diabetes and hypertension. In addition, tripe contains purines, compounds that can lead to the overproduction of uric acid in the body, potentially triggering gout flare-ups, a disease that causes pain and swelling in joints.

    “People with conditions like gout need to be especially cautious about how much tripe they consume because purines can raise uric acid levels in the body,” says Mr Nyanumba.

    “Tripe also takes longer to digest, which can worsen digestive disorders such as gastritis or constipation.”

    Despite these concerns, Mr Nyanumba debunks the myth that tripe has zero nutritional value. Albeit lower than the other meats, it is rich in vitamin B12 and zinc. However, he stresses that tripe must be properly cleaned and cooked to ensure it is safe for consumption.

    “Thorough cleaning is essential when preparing tripe,” he says.

    Kenyans love deep-fried matumbo, but Mr Nyanumba says you should cut it into small pieces and avoid deep frying, as that adds unnecessary fats. Instead, opt for boiling or stewing, and you can enhance the flavour with natural spices.”

    For those looking for healthier alternatives, Mr Nyanumba suggests opting for lean cuts of meat or plant-based proteins such as beans, green grams, and lentils.

    “These options provide the same nutritional benefits as tripe without the health risks associated with saturated fats and cholesterol,” he says.

    Joy Ouma, a registered clinical nutritionist and dietitian at Aga Khan University Hospital, adds her perspectives on the rising consumption of tripe.

    While offal (entrails and internal organs of an animal), including tripe, is often considered less desirable, she explains that it offers some nutritional benefits.

    “Offal, such as liver and kidneys, are higher in specific nutrients like vitamins B12 and A, along with minerals like iron and folate. While beef and chicken may offer different protein content, offal can provide these essential micronutrients,” she says.

    However, Ms Ouma warns about the health risks of consuming organ meats like tripe, particularly if they are not properly sourced or prepared.

    “Improper handling can lead to foodborne illnesses due to bacterial contamination from pathogens like salmonella or E. coli, especially in undercooked organ meats. It’s critical to ensure proper hygiene and preparation to avoid these risks,” she says.

    Nutritional value of tripe

    Ms Ouma notes that besides vitamin B12, zinc and iron, tripe provides other essential nutrients such as selenium, which is an important antioxidant.

    “Tripe can contribute to a balanced diet, but it’s important to consider that liver and kidneys offer even higher nutrient levels, which makes them a better choice if you’re looking for a nutrient boost,” she says.

    Ms Ouma also refers to a 2020 study published in the Journal of Nutrition, which supports the inclusion of offal in diets due to its high nutrient density.

    “The research shows that while offal is nutrient-rich, moderation is key to avoid excess cholesterol and related health risks,” she explains.

    To maintain a balanced diet, Joy recommends that those who include offal in their meals adhere to the six principles of nutrition—adequacy, balance, calorie control, nutrient density, variety, and moderation.

    “It’s important to alternate between different types of offal and combine them with a variety of other foods to ensure a well-rounded diet,” she advises.

    Regarding the belief that eating tripe after drinking alcohol helps with recovery, Ms Ouma is cautious.

    “There isn’t enough scientific evidence to support this claim. While proteins are important for recovery, hydration and balanced nutrition are far more effective at alleviating hangover symptoms,” she says.

    The Alabama high school football season is well underway and the Gadsden area has some big games in Week 5.

    There are some big games in the area, headlined by the county line rivalry between Boaz and Sardis. In Dekalb County there are two big matchups in Class 3A Region 8 between Fyffe and Sylvania and Geraldine and Collinsville, both will have major playoff implications. Hokes Bluff and Etowah have big region games that could determine region standings when all is said and done this year.

    This year, the Gadsden Times’ Maxwell Donaldson will be picking five games each week. In Week 5, Max went 3-2, his second straight winning record, moving his season record to 15-15.

    INTERNATIONAL FALLS — Sophomore quarterback Wyatt Holmes threw for a touchdown pass and rushed for another as the winless Crosby-Ironton Rangers gave the unbeaten International Falls Broncos a scare in a 39-36 loss Friday, Sept. 27.

    After trailing 24-0 at halftime, C-I cut into the Broncos’ lead at 24-20, but an 82-yard kickoff return following C-I’s score spoiled the Rangers’ upset hopes.

    C-I’s Evan Rydberg rushed for three touchdowns and three two-point conversions. He carried the ball 23 times for 107 yards

    Holmes, in his first career start, hit Eldon Mclean on a 24-yard pass for C-I’s touchdown pass.

    FIELD HOCKEY

    North Stafford 4, Brooke Point 0: Madison Gagnon had two goals and an assist, and Avery Teague also scored twice to help homestanding North Stafford get a Commonwealth District win on Thursday night.

    Haley Walsh added an assist, while the defense of Marissa Scenters, Elle Smith, Peyton Jacobs and Sam Middleton held Brooke Point to zero shots on target for the Wolverines (10-1, 6-1), who host Riverbend on Tuesday.

    Fredericksburg Academy 2, St. Catherine’s 2: Goalie Elly Snyder kept the visiting Falcons in the game with 22 saves, and Charlotte Kolodgie and Savannah Stec each scored goals to help Fredericksburg Academy rally from a 2-0 deficit to get a tie.

    Stec and Taylor Moss assisted the goals, and Kolodgie registered a defensive save for the Falcons (4-1-1), who visit Trinity Christian on Tuesday.

    Stafford 4, Colonial Forge 1: Madison Patton had a goal and an two assists, and Maddy Pulliam added one goal and one assist to help visiting Stafford get a Commonwealth District win.

    Massaponax 3, Mountain View 1: Kelsey Bowler had 23 digs and 15 kills, and  Massaponax used a strong team defensive effort to get a 25-19, 25-15, 18-25, 25-17 Commonwealth District win.

    Other leaders for the Panthers (11-4, 4-2), who visit Colonial Forge on Monday, were Brenna Raymond with 20 digs, Addy Higgins with 15 digs and 15 assists, and Cameron Cox with 14 digs and six aces.

    Elsie Afful had nine kills, four blocks and an aces, and Bella Park amassed 26 assists, seven digs and seven aces for Mountain View, which hosts Riverbend on Monday.

    Colonial Forge 3, Stafford 0: KarleiGibson and Carly Ford combined for 34 assists, with Ford adding five aces to help Colonial Forge cruise to a 25-12, 25-14, 25-15 Commonwealth District home win.

    Jasmine Williams totaled eight kills, Kendal Walker supplied 13 digs and four aces, and Kadie Cardozo added 14 digs for the Eagles.

    North Stafford 3, Brooke Point 0: Lindsay Canty had 14 kills and Allison Spittal 13 digs to help homestanding North Stafford roll to a 25-18, 25-10, 25-17 Commonwealth District win. Jordan Ellis added five kills for the Wolverines.

    King George 3, James Monroe 0: Brooke Heim led the offense with 11 kills, and added 18 digs and two blocks defensively to lead visiting King George to a hard-fought 28-26, 25-23, 25-16 Battlefield District win.

    Other leaders for the Foxes included Mia Cintron with eight kills and a block, Piper Allen with a block, Kylie Peart with 15 digs, and Selena Buckalter with 11 digs. King George totaled 17 aces as a team.

    Caroline 3, Eastern View 1: Riley Forehand had 33 kills, and Kayla Veney supplied 33 assists and three blocks to help visiting Caroline get a 20-25, 25-23, 25-21, 25-20 Battlefield District win.

    Ally Muhlencamp contributed 12 kills and Gracelyn Edwards 15 digs for the Cavaliers (8-6, 4-1).

    BOYS’ SOCCER

    Highland 8, Fredericksburg Christian 1: The Eagles traveled to Warrenton and dropped a tough one on the road on Thursday. Two sophomores connect for FCS’s goals with Ethan Ognek tallying the goal off an assist from Wyatt Dale.

    Quad meet at Spotsylvania: The Spotsylvania boys and girls cross country teams remained unbeaten on the season with wins over King George, Chancellor and Culpeper on Wednesday.

    In the boys’ event, the Knights swept the top three spots led by Austyn Harmon’s first-place showing in a time on 18:00, for a total on 19 points. The Foxes came in second with 47 points, the Chargers third with 81 points and the Blue Devils fourth with 99 points.

    On the girls side, Spotsylvania scored 21 points led by a first-place finished from Allison Nelson in a time of 20:15. King George got second with a score of 34 and Culpeper third with a score of 72. Chancellor did not have enough runners for a team score.

    The Tennessee high school football season has reached its midseason.

    Here are the top Columbia high school area football games in Week 6 of the TSSAA regular season with predictions for each.

    Tullahoma (2-3, 1-1 in 5-5A) at Columbia (3-2, 1-1)

    Time: 7 p.m. When: Friday

    Columbia’s defense has been strong so far this year, but it will face a test when Tullahoma comes to town. Columbia’s secondary will be key, tasked with slowing down receiver Khani Johnson and the Wildcats’ offense, which has scored at least 21 points in every game this season. A solid defensive showing along with another impressive performance on the ground from Justis Haggard should see the Lions improve to 2-1 in Region 5-5A.

    Prediction: Columbia 24, Tullahoma 20

    Columbia Academy (3-2) at Ezell-Harding (2-3)

    Time: 7 p.m. When: Friday

    Expect plenty of points from Columbia Academy in Week 6, as it takes on an Ezell-Harding team that’s struggled on both ends of the ball this season. This likely means a big game from running back Montae Baldwin, but look to quarterback Stephen Nieves for a standout performance as well. On defense the Bulldogs should impress once again, after holding DCA’s typically high-powered offense to seven points last week.

    Prediction: Columbia Academy 45, Ezell-Harding 17

    Time: 7 p.m. When: Thursday

    After its first win of the season last week, Spring Hill could find itself in a battle against Lawrence County, with both sides looking for a first win in regional play. While Lawrence County’s defense has been shaky at times this season, the Raiders may struggle to keep up with the production of the Wildcats’ run game, led by Carter Pettigrew.

    Prediction: Lawrence County 24, Spring Hill 17

    Lewis County (2-3, 1-2 in 5-2A) at Mt. Pleasant (5-0, 3-0)

    Time: 7 p.m. When: Friday

    After holding Summertown to 13 points last week, Mt. Pleasant will need another staunch defensive outing against Lewis County. Lewis County’s offense has found a rhythm recently, scoring 76 points over its last two games, but Mt. Pleasant has the defensive talent to slow the Panthers down. With the variety of weapons the Tigers have on offense, anyone could step up and have a big game, but keep an eye on JP Easterling after he ran for three touchdowns last week.

    Prediction: Mt. Pleasant 28, Lewis County 14

    Independence (0-5, 0-1 in 6-6A) at Ravenwood (5-0, 1-0)

    Time: 7 p.m. When: Friday

    Independence’s gauntlet of a schedule continues against Ravenwood, one of Class 6A’s top teams. While the Eagles have improved on offense after two scoreless games to start the season, the Raptors defense has allowed just 33 points through five games. Expect another strong defensive outing from Ravenwood, led by Matt Anderson and Auburn commit Donovan Starr.

    Prediction: Ravenwood 28, Independence 7

    Summit (1-4, 0-1 in 6-6A) at Franklin (3-2, 1-0)

    Time: 7 p.m. When: Friday

    The Spartans offense has struggled to produce as of late and that trend could continue against Franklin, which has only allowed 17 points over the past two weeks. Summit’s success in the run game will be the determining factor. If Mason McEhaney and Dillon Pierce can each rack up plenty of yards on the ground, the Spartans could pull the upset. A Franklin win puts the Admirals in a prime spot for a playoff berth.

    Prediction: Franklin 31, Summit 10

    Despite suffering its first loss of the season last week, Summertown’s defense continued to impress, and that trend should continue against Harpeth. Summertown had begun to find its form on offense heading into last week’s game, and while Mt. Pleasant held the Eagles to 13 points, expect quarterback Jaden Stoll to rekindle the fire this week.

On the other sideline, the Huskies also come in on a four-game slide, but their only win happened to come on the road in a 42-6 beating versus Central Mountain.

    Chip Green, Littlefield

    Green was 15 of 19 passing for 337 yards and five TDs in a win over Morton. He also ran for 97 yards and two TDs on 15 carries.

    Nate Casarez, Roosevelt

    Casarez recorded 15 tackles, two forced fumbles, one fumble recovery and an interception in a win over Stanton. He also ran for 167 yards and four TDs, in addition to 57 passing yards and a TD.
