    From Chemicals To Rodent Excreta, Hyderabad Restaurant Inspections Find Safety Violations

    The food safety team in Telangana conducted inspections in the Rangareddy district and Kompally area on December 30, 2024, and uncovered multiple food safety violations. State-level task force team conducted inspections in Rangareddy district at M/s All Rich Dairy Pvt Ltd (Swetha Diary), Pasumamula(V), Abdullapurmet(M). Harmful chemicals such as TGV 999 caustic soda (850kg) were found at the location and suspected to be used for adulteration. Multiple label defects were identified on the final products including cross-branding and non-declaration of additives like artificial flavors. Chemicals and disinfectants were found stored in close vicinity of final milk products such as paneer and flavoured milk in the same refrigerator.

    In view of the nature of the violations identified, the license of the establishment has been suspended.

    The task force team also conducted inspections in the Kompally area, Hyderabad, on the same date.

    At Malnadu Kitchen, raw meat like chicken, mutton etc was found to be dumped in the refrigerator in an unhygienic manner which can cause contamination. Rodent excreta was found in several places in the storage. The flooring was found to be patchy and littered with food waste in some places. Walls were found to be oily and tiles were found to be broken at some places.

    At Train Theme Restaurant, flooring was found to be patchy, and slippery with littering of food waste at several places. Drains were found to be clogged with food waste and stagnant water. Few food articles were found to be stored on the floor in the storage area.

    Lastly, at Ulavacharu, expired crushes (3 packs) and Kova (1 pack) and misbranded and expired food articles (139 Goli Soda bottles) worth Rs. 14,936 were found and seized. Vegetables like tomatoes were found in rotten condition. Refrigerators were not maintained in hygienic condition. Drains were found to be clogged and not equipped with insect traps. The grinding area and washing area were found to be very unhygienic. The exhaust was found to be greasy and untidy.

    Two popular restaurants in Hyderabad’s Chaitanyapuri have come under fire after a surprise food safety inspection by the Telangana Food Safety team uncovered alarming violations, raising serious public health concerns. The findings, shared through viral posts on X (formerly Twitter) by the Commissioner of Food Safety, detailed unsanitary conditions at Bahar Biryani Cafe and Shilpi Elite Restaurant and Bar. The inspection at Bahar Biryani Cafe revealed alarming lapses in hygiene and food safety protocols. The restaurant lacked essential medical fitness certificates for food handlers and water analysis reports, while no Food Safety Training and Certification (FoSTaC) trainee was present.ย

    Inspectors found open drains and stagnant water in the kitchen, and the kitchen doors were not fitted with insect-proof screens. Expired food items, such as hot pepper sauce and chocolate syrup, were discovered and discarded, while synthetic food colours suspected to be used in food preparation were found in the storeroom.

    The restaurant also violated basic food storage norms by storing vegetarian and non-vegetarian food items together in the same refrigerator. The refrigerator was found to be unhygienic, with no temperature records maintained, and unlabelled food items were stored inside. The team also found unlabelled MSG packets and noted that raw chicken was improperly dumped in the refrigerator.

    Shilpi Elite Restaurant and Bar was found to have similar violations. The restaurant failed to display its FSSAI licence and pest control records, while its medical fitness certificates and water analysis reports were missing. Inspectors noted that the kitchen ceiling was greasy, and the food in the refrigerator was not labelled or covered. Rotten vegetables, including tomatoes and bitter gourds, were found, along with live cockroach infestations in the vegetable storage and refrigerator areas.

    The inspection team also found food handlers without necessary protective gear like hair caps, gloves or aprons. Like Bahar Biryani Cafe, Shilpi Elite stored both vegetarian and non-vegetarian items together in the same refrigerator, further raising health concerns.

    In the compact office of Creative Bee studio in Banjara Hills, Hyderabad, are samples of lifestyle accessories such as pen stands, coasters, table mats, baskets and lampshades made of water hyacinth fibre, priced between โ‚น300 and โ‚น5,000. Some of the sturdy baskets and lampshades are at least a decade old. Bina and Keshav Rao, founders of the organisation, which is reputed in the handloom and craft sector, have helmed skills training projects. After training women in two villages in Tuticorin, Tamil Nadu, in 2022, Keshav recently conducted a survey of three villages in Bihar for a similar project; he also hopes to train women in Hyderabad and in the nearby districts of Telangana.

    The couple points out that water hyacinth, the weed that grows wild on water bodies, can be harnessed to provide a source of livelihood to people trained to make lifestyle accessories. โ€œIf the products meet quality control as per international standards, there is huge potential. Stores such as Walmart and Ikea look to source products made with natural fibres,โ€ Bina explains.

    Creative Bee has been part of UN-aided craft training projects in India and Southeast Asia in the past. Going by its track record and learning about some of the products available in Thailand, the Collectorโ€™s office in Tuticorin and Tamil Nadu State Rural Livelihood Mission invited them for a training project.ย 

    Following a preliminary survey of the water bodies near Tuticorin, a programme began in Authoor and Kottakurichi villages in January 2022. Women from self-help groups, many of them wives of farmers in the nearby banana plantations, took part in the training. โ€œInitially it was a small group. As word spread, more women came forward and were provided a stipend. We trained 60 women,โ€ says Bina.

    Keshav had designed tool kits to help slit the water hyacinth stems, weave and pleat them. Product prototypes were designed with the help of alumni from the National Institute of Design, Ahmedabad. He explains that the first few days are normally spent in thoroughly washing the fibres to prevent fungus formation. The fibres are then sorted according to thickness and length and dried on tiled rooftops. โ€œThis takes about five or six days in summer and longer in other seasons. Once completely dry, the fibres are trimmed to the required thickness.โ€ย

    The pleating of fibres into baskets and other products is a skill perfected through practice. It takes six weeks to learn basic pleating techniques. Keshav says there is often a misconception that a training programme of a fortnight or a month would suffice. He shows a few baskets that reflect the amateurish handwork with irregularities in pleating. In contrast, the pleating and finish of the products made by artisans who have trained for a few months, stand out as premium products. โ€œAt least six months of training is essential to achieve stringent quality control and uniformity for bulk corporate orders and for national and international lifestyle stores. We also identify the skill sets and delegate the task. One might be good at trimming the fibres while another might be good at pleating or ensuring a smooth finish of the product, and so on.โ€

    Baskets and desk accessories are only one part of the product line. Keshav and Bina point out that there is scope to design furniture as well.

    โ€œThe Tuticorin project extended to eight months since normalcy was just being restored post lockdowns. The women had learnt to make good quality products,โ€ says Bina. Towards the end of the project, Ramesh Flowers, a company that exports dry flowers and other lifestyle products for an international company, helped facilitate a bulk order of water hyacinth products. The project is still underway in Tuticorin, says the couple, and adds that their involvement was only with the training programme.

    Bina and Keshav hope to train more people in the craft. A survey of water bodies in Bihar has helped Keshav identify three villages โ€” Samsa, Kaidarabad and Rajlakhanpur. โ€œAt the moment, we have a few artisans in Tuticorin who can be trainees and impart these skills to others in Bihar. We hope to impart the skills to a few women in Hyderabad and the surrounding regions in Telangana as well,โ€ says Keshav.

    Hyderabad’s popular Karachi Bakery, which has been there since the 1950s, recently came under the radar after the Food Safety Commissioner for Telangana raided one of its outlets at Moazzam Jahi Market area and claimed to find expired products. The Food Safety officials visited the popular Bilal Ice Cream parlour at the same location and found issues with the items being sold there. They further took to the social media handle X (formerly Twitter) to share the information with the public.

    According to the post on X, the Karachi Bakery outlet had expired stocks of rusks, biscuits, candy, chocolate cakes, toast, and buns “worth Rs. 5,200”. The Food Safety Commissioner informed that those food products were discarded immediately. That’s not all. The authority also complained of “use by dates not displayed on pastries and cakes, thereby violating the FSSAI regulations.” Moreover, they also found multiple unlabelled products, which was against the FSSAI Act.

    In another post, the food authority informed that the Bilal Ice Cream outlet and its manufacturing unit were found operating without any valid license. Alongside, there were water bottles of fake brands sold at the outlet. “Notice issued and action will be taken,” informs the food safety officials.

    When you go to a restaurant or buy food from a store, you assume it’s safe to eat, right? But if the people handling your food aren’t following proper hygiene practices, you could end up with a nasty case of food poisoning. On Friday, September 13, food safety officials conducted raids and inspections at several eateries in the Vidyanagar area of Secunderabadย and found multiple food safety violations. The inspections, carried out by the Task Force teams of Telangana’s Commissioner of Food Safety, revealed alarming lapses in food safety and handling practices at several eateries, including Emerald Mithai Shop, Subway, Rollzone and Good Fresh – The Pizza House, in Hyderabad.ย

    At Emerald Mithai Shop, inspectors found no pest control and medical fitness certificates. Plus, no FOSTAC-trained personnel were present, and the wood-pressed oil manufacturing area door was left outside without insect-proof screens. The shop also had unlabelled sweets and savouries on display and open dustbins without lids were seen. Some items sold at the shop did not have FSSAI certificates, and food handlers were not wearing gloves or aprons.

    Subway was also found to be violating hygiene norms. Semi-prepared ingredients and ready-to-cook food items were not properly labelled, and use-by dates were missing. The gap between storage racks and walls was not maintained, leading to pest infection risks. Moreover, the fast-food chain outlet did not have a FOSTAC-trained supervisor.

    Similar violations were found at Rollzone and Good Fresh – The Pizza House. Rollzone did not display its FSSAI licence, and food items stored in the refrigerator lacked labels. Food handlers were also not wearing necessary protective gear such as head caps, aprons, or gloves. At Good Fresh, the FSSAI registration copy was not displayed on the premises, and medical fitness and pest control records were missing.

    Earlier, the FSSAI shared some food safety tips to follow during the monsoon season:

    1. Wash all food products purchased from the market properly before cooking.
    2. Keep yourself and your surroundings clean, and wash your hands with soap and water before cooking and eating.
    3. Use only clean water for cooking.
    4. Eat freshly cooked food and cook only as much as you need.
    5. Refrigerate leftover food as soon as it cools down to avoid microbial growth.
    6. Heat leftover food properly before consuming it.
    7. Keep perishables like milk and curd in the refrigerator immediately.
    8. Use fresh and local food products.
    9. Include immunity-boosting ingredients like pepper, garlic, ginger, cumin seeds, coriander, and turmeric in your diet. Read more here.

    Telangana’s Commissioner of Food Safety visited MG Bus Station in Hyderabad’s Imblibun area on September 10, 2024. The task force inspected several food outlets at the location and unearthed serious violations. Firstly, at Nandini Cafeteria, the officials found patchy flooring, water stagnation, open washroom doors, windows without insect-proof screens, 20 kilos of suspected contaminated lime pickle and unlabelled and uncovered food inside the refrigerator. The food handlers were not wearing aprons and hair caps. That’s not all. The task force seized 50 kilos of toor dal and 50 kilos of packed coriander, as they “were found without proper labels, such as the date of packing and use-by dates.” It was also observed that raw food materials such as flour and pulses were “stored directly on the floor, with no gap maintained between items and walls.” Additionally, an iron stand kept above the area for rice preparation was discovered to be corroded and rusted. The FBO [Food Business Operator] had failed to maintain the requisite pest control records and medical fitness certificates. It had also not displayed a copy of its FSSAI license in a prominent place.

    At Yagnesh Virat Food Court, the officials discovered houseflies in the kitchen, overflowing dustbins without lids and unlabelled dishes in the fridge. They noted that the premises were “open to the external environment,” and there were no insect-proof screens. Moreover, the necessary Medical fitness certificates and pest control records were not found at the establishment at the time of the inspection.

    The task force also inspected Stall No. 24 at MG bus station. They found out that the FBO was operating its business without an FSSAI license. Medical fitness and pest control records were unavailable. The kitchen premises were “found in a highly unhygienic condition,” as per the officials. The dustbins were “overflowing with filth” and houseflies were hovering around them. Cobwebs were observed near the storage area. There were issues with the food too. The team discarded synthetic food colours that they discovered were being used in Chinese dishes. Additionally, cooked rice and flour were not stored properly, as they were not labelled and covered.

    Next, the task force conducted inspections at Raghavendra Bakery and Fast Food. The FBO did not provide a copy of its FSSAI license at the time of inspection. Medical fitness certificates and pest control records were also not available. The team made note of broken tiles, greasy walls, live cockroach infestation in the kitchen, windows without insect-proof screens and food handlers without hair caps and aprons. Synthetic colours were being used in Chinese food and were thus discarded. The officials stated that the refrigerator was in an unhygienic condition. The food stored inside it did not have labels and covering. Other food items like rice and flour, stored outside, were kept directly on the floor.

    The day before these inspections, the task force visited tiffin centres and hostels in Hyderabad’s Ashok Nagar area. Wide-ranging food safety violations were unearthed at these establishments. Click here to read the complete story.
