    Chettinads Kalkandu Vadai Gives A Sweet Twist To South Indian Breakfast Staple (Recipe Inside)

    It was in Karaikudi in the heart of Chettinadu, in Southern Tamil Nadu that I attempted to describe a vadai or vada to my American friends who had tagged along with me for a food trail in the state. Sandwiched in the arid belt between Pudukottai and Ramanathapuram are the 70-odd villages and towns that make up Chettinadu. The easiest comparison for a vada is a doughnut. Just like a doughnut, the vada has a hole in the centre and it’s deep-fried. It’s also a breakfast staple in many parts of South India. But there are a couple of major differences.
    The most obvious difference is the batter. A typical medu (for soft) vada is crafted with urad dal while a doughnut uses flour dough. A vada is usually a savoury dish that’s eaten with sambar or chutney. At least that’s what we all think. That’s if you’ve not been to Chettinadu and have tried a special from the region called a kalkandu vadai or a sweet vadai.

    Weddings are an elaborate affair in the Chettinadu region. The culinary journey does not stop with breakfast and lunch. There’s an elaborate tea menu as the bride and groom leave for the groom’s house. Aadi Kumayam (Lentil and rice halwa) and the Rangoon Puttu are traditional favourites. And then there’s a dinner at the groom’s house to welcome the bride where a long list of heavy snacks, savouries and sweets are served. It was at one of these dinners that I first tried the Kalkandu vadai.
    Kalkandu refers to rock candy or mishri in Hindi. This unique twist to a vadai is made with powdered rock candy and sometimes served with rock candy for its unique textures and extra sugary appeal. This was an easier version of the vadai for my American friends to comprehend and draw parallels with a classic American doughnut. Except it’s not a dish that’s widely served across Tamil Nadu or South India. While it’s best known as a Chettinad Kalkandu vadai and served during special occasions and festivals, I discovered that it’s also possible to add crushed jaggery (instead of sugar candy) to the recipe.

    Recipe – Sweet Vadai

    Ingredients:

    • 1 cup urad dal 
    • 1/4 cup crushed jaggery 
    • 1 cup sugar for making sugar syrup 
    • A pinch of salt 
    • 1/2 tsp cardamom powder 
    • Oil (for deep frying)
    • Water for the sugar syrup

    Method:

    • Wash and soak the urad dal for about two hours.
    • Grind the dal to a coarse thick paste without adding water.
    • Add the crushed jaggery and grind until the batter gets fluffy.
    • Make single-string consistency syrup with sugar and water. Add cardamom powder to the syrup. Add a pinch of salt to balance the sweetness.
    • Make balls out of the batter (the size of a lemon). Flatten it and make a hole at the centre with a finger.
    • Drop slowly into hot oil and fry the vadai on both sides on a medium flame until golden brown.
    • Remove with a vadai strainer and dip them in the sugar syrup for about 3-5 minutes.
    • Remove the vadais from the syrup, transfer them to a plate and serve hot.
    • You could sprinkle some sugar candy (kalkandu/mishri) if you’d like.

    You will notice that the recipe is similar to the traditional medu vadai (you can try this recipe at home too).

    Recipe – Medu Vada/Ulundhu Vada

    Ingredients:

    • 1 cup whole urad dal
    • 2 green chillies finely chopped
    • 1/2 cup onion finely chopped
    • 1/2 tbsp ginger finely chopped
    • 1 tbsp  black peppercorns
    • 1/2 tbsp cumin seeds
    • One sprig of curry leaves finely chopped
    • A pinch of asafoetida
    • Salt (to taste) 
    • Cold water (as required)
    • Oil for deep frying

    Method:

    • Wash & soak urad dal for 2 hours. 
    • Add urad dal in small quantities while grinding. Sprinkle cold water now at regular intervals as you grind the batter till it gets fluffy.
    • Transfer the batter to a bowl, and add the chopped onions, green chillies, ginger, black peppercorns, curry leaves, salt and asafoetida.
    • Stir well and keep aside.
    • Heat oil in a shallow pan for deep frying.
    • Moisten your hands and make a small balls of the batter with hole in the middle and drop it in oil.
    • Fry in medium flame till both sides turn crisp and golden brown.
    • Serve hot with chutney or sambar.

  • The boy from a boxing village who made it in Indian football

    It has been quite a last few months for Aakash Sangwan. After impressive performances at left-back for Chennaiyin FC in the last two seasons, the 28-year-old signed for FC Goa and has now earned his first-ever India call-up.
    Sangwan has three sessions in the blue training jersey so far, the first one in Kolkata followed by two more in Nam Dinh, Vietnam, where India have come to face the hosts in a friendly on October 12. Every new day feels like a dream for the Bhiwani boy.
    “The first call-up to the national team is always special as everyone desires to play for India at least once in their lives. So, it means a lot,” said Sangwan, who shares his room with former Chennaiyin FC teammate Farukh Choudhary as quoted by the AIFF official website.
    “The experience so far has been great. I can see why most of these players have been a part of the national team for so long, everyone here is confident and sure about their abilities. I want to contribute to the team as much as I can in whatever way possible so that we can move forward in the right direction,” Sangwan added.
    It was just over a week ago when Sangwan discovered he would be on the plane to Vietnam, thanks to a text that left him confused at first, and then pleasantly surprised.
    “Well, someone sent me a congratulatory text and I couldn’t make out what the wish was for. Then when I went online I saw the list of probables and realised why I got the text. It was a surprising as well as a joyous moment,” he shared.
    What’s not surprising for Indian football fans is Sangwan’s inclusion in the national squad. Dishing out consistent performances in the ISL in a highly-competitive position like left-back and making to the national team where several names like Subhasish Bose, Akash Mishra, Jay Gupta, and Naorem Roshan Singh have played at the position in the last year, just goes to show the level he has acquired.
    It’s a unique situation, but Sangwan has the same head coach and the majority of the coaching staff at his club FC Goa, and the national team, which in some way, has made adjusting to the India camp easier for him.
    “One thing I can say about the coaching staff is that they are honest and direct people. Good or bad, they will tell you directly to your face. Coach Manolo’s relationship with me is just as good as he has with every other player in the national team and FC Goa,” he said.
    Just over two years ago, Sangwan was an I-League player for RoundGlass Punjab FC, hoping to make a big move. Chennaiyin FC came calling and after 10 assists in two seasons for the Marina Machans, the doors to the Indian national team have opened up.
    “I believe it’s the constant learning and growing day by day that helped me gain these recent step-ups in my career. I will keep trying to do what I have always done – and that is giving my best and learning from every situation, whether good or bad,” he said.
    Sangwan’s footballing journey began in Bhiwani, a town in Haryana renowned for producing world-class boxers. But Sangwan’s sporting journey began with his feet – at the age of 10 when he joined a local coaching academy at the Bhim Stadium with his two elder brothers.
    “Until 16 years of age, I played in every open tournament possible in Haryana. Then my family shifted to Panchkula and I started training at the Sector 17 Ground in Chandigarh. For the next few years, I played inter-university tournaments and the Santosh Trophy,” he said.
    Then, Minerva Punjab FC happened, which opened Sangwan’s doors to professional football. He was part of the club’s senior team from their very first season in the I-League and made his debut in April 2017. In the 2017-18, Minerva won a historic I-League title, bringing Sangwan his first major trophy.
    “I spent multiple years at Minerva. From coming on as a substitute to eventually becoming a regular in the first eleven. I later played for Churchill Brothers and RoundGlass Punjab FC before making it to the ISL,” he concluded.

    Stuffed Paniyaram Recipe: A Clever New Twist To Classic South Indian Snack

    Almost every day we see a new food trend take the Internet or social media by storm. There are some trends that we wish would disappear by the end of the week. But there’s one trend in Chennai that we’re happy has stayed the course – the stuffed paniyaram or the stuffed kuzhi paniyaram. This trend is also playing out at WelcomCafe Marina, the all-day dining destination at the Welcomhotel Chennai Cathedral Road that has returned after a major overhaul.

    One of the most scrumptious snacks in South India, the kuzhi paniyaram takes its name from the kuzhi or the depressions in a special pan that are purposed for these delicious dumplings. It’s one of the most popular street food dishes in many parts of South India (It’s called guliyappa in Karnataka).

    The WelcomCafe Marina offers a special selection called Taste of Madras that reimagines some of the popular streets of Chennai and beyond. The menu has room for a clever rasam ramen and a Kozhi (chicken) ghee Roast Slider but it’s the stuffed paniyaram that caught our attention. There’s a Beans Vepudu Paniyaram Takoyaki that’s embellished with kempu chutney, homemade mayonnaise, sesame seed, peanut, and crackling spinach. There’s also a bold play on a pork dumpling – the Pork Paniyaram Takoyaki with a similar stuffing.

    We’re seeing quite a few restaurants and bars across the city experimenting with the paniyaram. The basic recipe remains the same, it’s the filling that is the twist. We’ve seen chefs getting quite creative with the fillings of these stuffed paniyarams. From salmon and cream cheese to paneer and potato, we’ve seen it all. You can try making these paniyarams at home (Try our flavourful masala stuffed paniyaram – see recipe) or you can try the classic paniyaram (see recipe).

    Beans Paniyaram

    Masala Stuffed Kuzhi Paniyaram Recipe

    Ingredients 

    • 3 medium-sized potatoes –  boiled & mashed 
    • 1/2 tbsp Turmeric powder 
    • 1 tbsp Red chilli powder 
    • 1 tbsp Mustard seeds
    • 1 tbsp Cumin seeds
    • 1/4 tbsp Asafoetida 
    • 1 sprig Curry leaves (finely chopped)
    • 2 cups paniyaram batter 
    • Salt as required 
    • 3-5 tbsp Oil 

    Method:

    1. Heat oil in a pan, add the mustard seeds, cumin, turmeric powder, salt, red chilli powder, asafoetida and curry leaves. Fry the masala for a minute on a low flame, add the mashed potato to the tempering and mix well. Keep the filling aside. 
    2. Add finely chopped onions, ginger, green chillies and curry leaves to the paniyaram batter; stir well.
    3. ‘Temper’ the batter with mustard seeds, cumin seeds and asafoetida.
    4. Grease the paniyaram pan with oil & turn on the flame and heat for a minute. 
    5. Pour a little oil into each mould. Once the oil is heated, pour 1 scoop of batter into each mould. Now with a spoon add a little stuffing in the centre of the batter, now pour more batter to cover the stuffing. Don’t fill the batter to the brim.
    6. Drizzle some oil and cook for a minute. Now flip the paniyaram using a fork, add some more oil and cook till it turns crisp on both sides. Serves best with coconut chutney. You could also serve this with tomato ketchup.

    Classic Kuzhi Paniyaram Recipe 

    Ingredients

    • 1 Cup Idli/Dosa Batter 
    • Medium-sized onion (1) – finely chopped 
    • 2 Green Chillies -finely chopped 
    • 1 tbsp Grated Coconut
    • 1 tbsp Grated Ginger 
    • 1 tbsp Coriander leaves – finely chopped 
    • Salt (to taste)
    • Oil For Cooking 

     
    To Temper

    • 2 tsp Oil (Gingelly / Sesame oil works best)
    • 1 tsp Mustard Seeds
    • 1/2 tsp Urad Dal
    • 1 sprig Curry Leaves
    • 1/4 tsp Asafoetida

     
    Method:

    1. ‘Temper’ the mustard seeds, urad dal, and then add the onions, green chilli, ginger curry leaves and finally the asafoetida. 
    2. Saute it for 2 minutes on a low flame.
    3. Add grated coconut, coriander leaves once you switch off the flame. Add the salt and stir well. 
    4. Add this mixture to the batter. This is the key step. The batter should not be thick or watery.
    5. Mix the batter well.
    6. Use a paniyaram pan, and add oil to each mould. Add more oil if you like your paniyarams crispy. Make sure you don’t fill the mould with batter to the brim (Fill it to 3/4th level)
    7. Cover and cook on a low flame for about 2-3 minutes (keep the pan covered with a lid once you do). Once the bottom is cooked, flip to the other side, pour a little more oil and then cook again for another 2-3 minutes. Use this process for the remaining batter.

     
    This serves best with a tomato chutney or a spicy chutney. You can also serve it with the classic coconut chutney.
