Amid this, one place that truly stands out for its aesthetic vibe and delectable food is Covah – The Cavern. Based in the city’s sector 43, this is the place to be if you crave Mediterranean and Asian cuisine, paired with specially crafted cocktails.

    Recently, I had the opportunity to visit Covah, and the moment I stepped in, it was evident that this wasn’t just a restaurant – it was a dreamy escape. With interiors inspired by the mystique of caves, the space envelopes you in earthy beige tones and carefully sculpted walls. The ambience is intimate yet vibrant, making it a perfect place for your culinary journey.

    Our evening began with their signature cocktails, each thoughtfully crafted to showcase unique flavours. The first drink I tried was Summer’s Plunge, a Mediterranean-inspired blend that was both savoury and refreshing. The briny depth of Ketel One Vodka was beautifully balanced by the sweetness of watermelon shrub and the effervescence of passionfruit sparkling water. It was a light, herbaceous start that immediately set the tone for the evening.

    But that was just the beginning. Next came The Fire Ritual, a bold twist on the classic Picante. The smoky undertones of Reposado Tequila paired brilliantly with the vibrant heat of red paprika, while the citrus agave rounded it off with just the right amount of sweetness. This cocktail had a fiery charm that lingered long after the last sip.

    To complement the drinks, we dove into the food. Their extensive menu boasted a number of Mediterranean, Asian and fusion options. Although it was hard to choose one, we started with Chicken Yakitori. The skewers, coated in a luscious glaze of sake, mirin, and soy sauce, were tender and flavorful. The nuttiness of sesame and the freshness of spring onion added depth and texture, making it a dish that was as satisfying as it was comforting.

    The Butterfly Garlic Prawns were another highlight. Perfectly cooked and loaded with the richness of butter and wine, the prawns were amped up by a hint of chilli flakes that added just the right kick. Paired with crusty bread to soak up the indulgent sauce, it was a dish that took my taste buds on a roller coaster ride. However, it was the juicy and tender pork gyozas that stole my heart. I have never had such amazing gyozas ever. 

    Midway through the meal, we decided to explore more of their cocktail offerings. This time, I opted for Inner Roots, a drink that celebrated the vibrant flavours of Thailand. Bombay Sapphire Gin served as the base, elevated by fragrant notes of lemongrass and galangal, while the litchi cordial and kaffir lime essential oil added a burst of brightness. This aromatic cocktail paired beautifully with the Blackened BBQ Chicken, a smoky, succulent dish served with a refreshing corn coriander salsa and a creamy cucumber cumin dip.

    The culinary journey continued with two of Covah’s standout curries. The Chicken Malacca Curry was a Malaysian-inspired dish. The tamarind’s tanginess, the warmth of cinnamon, and the aromatic punch of curry leaves created a dish that was rich, hearty, and unforgettable. The Laksa Curry Bowl, which was recommended to us by the staff, certainly did not disappoint. The curry was a delicious combination of coconut milk, lemongrass, chilli, and turmeric, with noodles that soaked up the aromatic broth beautifully.

    We ended the night on a decadent note with Secrets of Java, a cocktail that doubled as dessert. The Blanco Tequila, banana saccharum, and hazelnut liqueur combined to create a drink that was sweet, nutty, and indulgent. The salted caramel banana tart finish was the perfect end to an exquisite meal.
    All in all, my time at Covah – The Cavern was great. The staff was courteous, the ambience – soulful. The food and drinks were definitely the highlight of my visit. I can’t wait to try other Mediterranean and fusion dishes that this place has to offer!

    On the evening of my visit, Loca was buzzing with excitement due to a bar takeover by the newly-launched Tequila52. As a tequila lover, I couldn’t be happier. I kicked off the evening with the Picante – a cocktail that struck the perfect balance. It wasn’t overly spicy and the tequila’s rich flavor shone through. The Mexican Romera, another tequila-based cocktail, was equally delightful.

    One would not always expect bar food to be just as good but Loca defied that expectation. While the drinks were exceptional, Loca’s food menu proved to be just as remarkable. The evening began with the Arabic Veg Platter, which was a true standout. The paneer skewers were perfectly roasted, exuding a smoky aroma that was beautifully complemented by the falafel and grilled vegetables. Next up was the Zucchini Boat, which was nothing short of a revelation. The cheesy stuffing was decadently rich and packed with flavour.

    As I contemplated my next choice, I spotted a server delivering an intriguing dish that instantly piqued my interest. It turned out to be the Falafel Platter, complete with an array of dips and a balloon pita – light as air and puffed up like a balloon. The pita bread was a delight, and the accompanying dips were a perfect match.

    Despite being quite full, I couldn’t resist indulging in dessert. Loca’s dessert offerings continued to impress. The Tiramisu was impeccably balanced – not too bitter, not too sweet. The Torta Royale, a mascarpone baked cake, was simply divine and left me longing for more.

    As I left Loca, I couldn’t help but feel a sense of satisfaction and contentment. Loca has quickly become a favourite of mine, and I am already looking forward to my next visit. If you find yourself in South Delhi and are in search of a memorable dining experience, Loca – The Social House should be at the top of your list.

    Former All Black Hosea Gear is living the Mediterranean lifestyle on Australia’s Sunshine Coast

    Hosea waves out to those who call his name as they enter, clearly enjoying this move to hospitality, but as for its success, he gives all that credit to Kate.

    A winning career

    Born and raised in Gisborne, Hosea played 14 tests for the All Blacks from 2008 to 2012 before he left to play for the Toulouse club in France.

    The couple always knew they’d one day return and settle in Australia, and after eight years, in 2020, they did just that.

    “Kate’s from the central coast (north of Sydney), although her dad’s originally from Kaitaia, and we always wanted to move back and live by the beach,” says Hosea.

    “We initially looked at Sydney, but it’s so expensive, so we did a road trip from Sydney to Noosa and stopped at all the beach towns along the way … and we just searched until we found something, and we loved it here. It reminds me of home actually because of the small town and community.”

    A year later, Hosea took on a role as the head rugby coach at Sunshine Coast Grammar School, before he and Kate decided to buy an unassuming tiny brick shopfront and convert it into a sleek Mediterranean-styled wine bar, and they’ve never looked back.

    Rugby to wine

    Hosea says the decision to launch into hospitality came from wanting to bring a small part of the things they missed from their time on the French/Spanish border to their new hometown.

    “Over there, they have the right balance of life and work, and we wanted to bring back all the things we loved in the Mediterranean here. For me, it’s also nice to do something Kate really loves because it’s always been about my career.’

    Minutes later, Kate joins us. She’s been at the region’s premier annual food and drink festival, The Curated Plate. There are around 90 events running over 10 days, all championing local producers.

    Think Mad Hatters Tea Party, where you sit on long tables under the lychee trees at family-owned Yanalla Farms in the Glass House Mountains drinking cocktails with lychees and eating sweet treats; and a gin-tasting at a century-old sugarcane farm where a new generation, Luke and Kylie Farrelly have launched Canefields Distillery as a way to continue the family legacy.

    Many of those participating in the festival are local, family-run producers and artisans, all following a dream, and their passion for food and wine is palpable – and it’s clear after a few minutes of talking to Kate, she’s in hospitality for the same reasons.

    “I love wine and loved our experience living in the Mediterranean and this is a combination of that. There is also no other wine bar here and we wanted to create a beautiful space near the beach for people to catch up.

    “It reflects us on holidays during our life in the Mediterranean and it reminds me of going to coastal towns in summer with the kids, and there was nothing like that here.”

    The concept

    To ensure they had an authentic menu, the couple brought in an Italian chef who created classic Mediterranean charcuterie plates, among other dishes. Think serrano sliders, caprese skewers, Mediterranean olives and smoked salmon crostini – all made from local and imported artisan products.

    It’s all matched with predominantly Mediterranean wines, but some Australian and New Zealand wines have made their way to the list.

    Before I leave, I tell them they must be proud of their success given how busy the bar is.

    “That’s what I love the most,” says Kate. “To be honest, it was scary going into a new industry, but it’s been fun, and everyone has been so supportive. The most rewarding thing is we’re learning every day. And my advice is if you’re ever going to do it, start small!”

    While they may have started small, they are already looking at expansion, and have bought the neighbouring property with plans to start a Mediterranean restaurant to complement the wine bar.

    As for the next generation taking over the bar and restaurant business, “All the kids are playing rugby,” says Hosea excitedly, so I guess it could go either way.
