    Rinse the moong dal 5-6 times until the water runs clear. Then, soak it for at least 1 hour or overnight. Once soaked, transfer it to a blender. Add chopped green chillies, water, and salt to the blender. Blend into a smooth batter and set aside.

    2. Prepare Eggs

    Crack the eggs into a bowl. Add seasonings of your choice along with chopped garlic, chilli flakes, and a dash of milk. Whisk until well combined. Heat a nonstick pan and add a little butter. Pour in the egg mixture and scramble it towards the end.

    Khatta Meat Recipe: A Dogra Delicacy From Jammu With A Medley Of Smoky And Tangy Flavours

    Cycling uphill is a whole different adventure compared to cruising on flat terrain. Just a couple of hours from the flatlands of Jammu airport lies the stunning Sanget Valley-Patnitop region, a world apart. Riding through the Himalayan foothills might’ve made for some killer Instagram posts, but let me tell you, it was a workout for my legs! After a long day, I made my way back to Skyview by Empyrean, my cosy weekend getaway, with a massive appetite. Luckily, the culinary team had a delicious surprise waiting for me.

    Not too far from Udhampur, the Sanget Valley boasts its own culinary gems. While Jammu often takes a backseat to the more famous dishes from Kashmir, one dish has been stealing the spotlight: Khatta Meat from the Dogra community. Thanks to a growing interest in regional cuisines in our post-pandemic world, this unique dish has gained quite the fanbase-especially on chilly mountain days. And the view from the Banana Leaf restaurant at Skyview by Empyrean made for the perfect backdrop as I indulged.

    According to the culinary team (see recipe), it’s the signature hot charcoal smoking technique that gives this dish its one-of-a-kind flavour. But Khatta Meat is more than just smoky goodness. There are two standout steps in the recipe-finishing it with dry mango powder and pomegranate seeds and garnishing it with fresh coriander and green chillies – that create a burst of flavour with every bite.

    The secret to nailing this dish is smoking those tender mutton chunks with hot charcoal soaked in desi ghee. This happens both during and after cooking. The dish combines a mix of ground and whole spices, red onion, special Kashmiri masala, and mutton cooked in mustard oil. The result? Meat so tender it practically melts in your mouth! While you can pair it with rice or rotis, in the Jammu region, it’s often served with Dogri Gheur, a traditional welcome dish for brides or special guests. Don’t be fooled by the seemingly complex smoking process; making Khatta Meat is surprisingly easy and totally worth the effort for its mouthwatering blend of tangy and smoky flavours.

    • Mutton: 500 gm
    • Onion (fried): 250 gm
    • Ginger Garlic Paste: 15 gm

    • Kasoori Methi: 20 gm

    • Salt: To taste
    • Amchur: 10 gm
    • Fennel Seeds Powder: 15 gm

    For Garam Masala

    • Cumin Seeds: 15 gm
    • Coriander Seeds: 10 gm
    • Black Cardamom: 2 nos.
    • Green Cardamom: 2 nos.
    • Cloves: 5 nos.
    • Cinnamon Stick: 2 sticks

    Method To Make Khatta Meat

    1. Roast cumin seeds and coriander seeds in a pan.
    2. Grind roasted seeds along with black and green cardamom, cloves, and cinnamon to make fresh garam masala powder.
    3. Marinate mutton with ginger garlic paste, salt, chilli powder, turmeric powder, amchur powder, garam masala, mustard oil, and yogurt; set aside for an hour.
    4. Heat mustard oil in a heavy-bottomed pan until smoking, add cardamom, cinnamon, and cloves, then saute. Add onions and marinated mutton, followed by remaining spices and lemon juice; cook for a bit.
    5. Add water and let the mutton cook until tender.
    6. Once the meat is cooked, stir in amchur and fennel (saunf) powder.
    7. Heat charcoal until red hot, place it in a small bowl and set it over the meat in the pan/cooker.
    8. Pour a little desi ghee or mustard oil over the hot charcoal, and cover the pan with a lid for 1 minute.
    9. Garnish with coriander, fried onions, and green chilli, then serve with boiled rice or roti.

    Chettinads Kalkandu Vadai Gives A Sweet Twist To South Indian Breakfast Staple (Recipe Inside)

    It was in Karaikudi in the heart of Chettinadu, in Southern Tamil Nadu that I attempted to describe a vadai or vada to my American friends who had tagged along with me for a food trail in the state. Sandwiched in the arid belt between Pudukottai and Ramanathapuram are the 70-odd villages and towns that make up Chettinadu. The easiest comparison for a vada is a doughnut. Just like a doughnut, the vada has a hole in the centre and it’s deep-fried. It’s also a breakfast staple in many parts of South India. But there are a couple of major differences.
    The most obvious difference is the batter. A typical medu (for soft) vada is crafted with urad dal while a doughnut uses flour dough. A vada is usually a savoury dish that’s eaten with sambar or chutney. At least that’s what we all think. That’s if you’ve not been to Chettinadu and have tried a special from the region called a kalkandu vadai or a sweet vadai.

    Weddings are an elaborate affair in the Chettinadu region. The culinary journey does not stop with breakfast and lunch. There’s an elaborate tea menu as the bride and groom leave for the groom’s house. Aadi Kumayam (Lentil and rice halwa) and the Rangoon Puttu are traditional favourites. And then there’s a dinner at the groom’s house to welcome the bride where a long list of heavy snacks, savouries and sweets are served. It was at one of these dinners that I first tried the Kalkandu vadai.
    Kalkandu refers to rock candy or mishri in Hindi. This unique twist to a vadai is made with powdered rock candy and sometimes served with rock candy for its unique textures and extra sugary appeal. This was an easier version of the vadai for my American friends to comprehend and draw parallels with a classic American doughnut. Except it’s not a dish that’s widely served across Tamil Nadu or South India. While it’s best known as a Chettinad Kalkandu vadai and served during special occasions and festivals, I discovered that it’s also possible to add crushed jaggery (instead of sugar candy) to the recipe.

    Recipe – Sweet Vadai

    Ingredients:

    • 1 cup urad dal 
    • 1/4 cup crushed jaggery 
    • 1 cup sugar for making sugar syrup 
    • A pinch of salt 
    • 1/2 tsp cardamom powder 
    • Oil (for deep frying)
    • Water for the sugar syrup

    Method:

    • Wash and soak the urad dal for about two hours.
    • Grind the dal to a coarse thick paste without adding water.
    • Add the crushed jaggery and grind until the batter gets fluffy.
    • Make single-string consistency syrup with sugar and water. Add cardamom powder to the syrup. Add a pinch of salt to balance the sweetness.
    • Make balls out of the batter (the size of a lemon). Flatten it and make a hole at the centre with a finger.
    • Drop slowly into hot oil and fry the vadai on both sides on a medium flame until golden brown.
    • Remove with a vadai strainer and dip them in the sugar syrup for about 3-5 minutes.
    • Remove the vadais from the syrup, transfer them to a plate and serve hot.
    • You could sprinkle some sugar candy (kalkandu/mishri) if you’d like.

    You will notice that the recipe is similar to the traditional medu vadai (you can try this recipe at home too).

    Recipe – Medu Vada/Ulundhu Vada

    Ingredients:

    • 1 cup whole urad dal
    • 2 green chillies finely chopped
    • 1/2 cup onion finely chopped
    • 1/2 tbsp ginger finely chopped
    • 1 tbsp  black peppercorns
    • 1/2 tbsp cumin seeds
    • One sprig of curry leaves finely chopped
    • A pinch of asafoetida
    • Salt (to taste) 
    • Cold water (as required)
    • Oil for deep frying

    Method:

    • Wash & soak urad dal for 2 hours. 
    • Add urad dal in small quantities while grinding. Sprinkle cold water now at regular intervals as you grind the batter till it gets fluffy.
    • Transfer the batter to a bowl, and add the chopped onions, green chillies, ginger, black peppercorns, curry leaves, salt and asafoetida.
    • Stir well and keep aside.
    • Heat oil in a shallow pan for deep frying.
    • Moisten your hands and make a small balls of the batter with hole in the middle and drop it in oil.
    • Fry in medium flame till both sides turn crisp and golden brown.
    • Serve hot with chutney or sambar.

    Korean Chilli Garlic Potato Recipe:

    1. Boil the potatoes until tender.
    2. Mash the potatoes well.
    3. Add cornflour/potato starch and knead the dough.
    4. Shape the dough into small, round balls and give them a mushroom-like shape.
    5. Boil the potato balls until they float to the top of the water.
    6. Immediately transfer the boiled potato balls to ice-cold water.
    7. For the sauce, combine chopped garlic, chopped spring onions, red chilli powder, soy sauce, and sesame seeds in a bowl.
    8. Pour hot oil over the sauce mixture.
    9. Toss the potato balls in the sauce.
    10. Garnish with more spring onions and sesame seeds.
