    Tis The Season For Plum Cake! How To Bake The Perfect Plum Cake This Christmas

    Some of our best childhood memories revolve around food. Food memories often spark nostalgia, and comfort and also strengthen our bonds with friends and family. My earliest memories around plum cake are rekindled each year around November and early December when hotels in most Indian cities organise Christmas cake mixing or fruit mixing ceremonies. While it’s easy to dismiss this as PR or photo opportunities, they are organised for a reason. There are accounts that suggest that the cake-mixing traditions have been part of British culture since the 17th century. This quintessential English tradition first began as plum porridge before evolving into the traditional Christmas or plum cake as we know it.

    According to Ashutosh Nerlekar, Director of Food Production, The Park, Chennai, cake mixing in earlier days was about the beginning of the harvest season. Communities friends and families got together to celebrate the season. Ashutosh adds that ingredients used in cake mixing-dried fruits, nuts, spices, and spirits are symbols of abundance and prosperity. “It is seen as a gesture of gratitude for the year’s blessings and a prayer for a fruitful year ahead.”

    Ashutosh’s tip for home bakers is to soak the fruits at least 6 weeks ahead of baking. He also strongly recommends giving this fruit mix a churn every week. “Make sure the fruits are cut small and evenly. Uneven and big fruits will make the cake crumbly. Use molasses for the nice dark colour. Add apricot jam to elevate the taste and richness. After the cake is baked spray it with some alcohol to keep it moist and boozy.” Many pastry chefs I spoke to, believe that the fruit soaking process helps the flavour, adds to the moisture content and also leads to the plumping of fruits. It’s a vital step in preserving the flavours and textures of the plum cake.

    Rehana, who is the Baker and Co-owner of OVN Bakehouse shares her secret step – “We cook the dry fruits in wine. The following day we add rum, whiskey and freshly ground spices and combine before letting it ‘sit’ for 10-12 months. Shri Bale, a Celebrity Chef and culinary anthropologist believes that spices are the key. She uses a spice mix powder with cinnamon, cloves, a dash of nutmeg along with loads of ground dry ginger. Her other secret ingredient is orange rind and zest. She also suggests the use of Blackjack caramel (caramelised sugar water) to moisten the cake.

    Chef Ravi Varma (Area Pastry Chef, Tamil Nadu, Indian Hotels Company Limited) who shared his plum cake recipe with us (See recipe below) believes the intensity of the flavours depends entirely on how long you soak the fruits. It’s why many of the guests at fruit mixing events this year may taste the ‘fruits of their labour’ only next year. Many hotels preserve this year’s fruit mix until next year when it soaks in alcohol for those intense flavours.     Plum Cake Recipe

    Ingredients:

    • Unsalted Butter – 100gm
    • Brown Sugar -100gm
    • Eggs-2nos
    • Flour -100gm
    • Ginger Powder-1gm
    • Cinnamon Powder 1gm
    • Nut Meg Powder 1gm
    • Candied Orange peel 28 gm
    • Candied lemon peel 28 gm
    • Candied Ginger Chips-12 gm
    • Candied Cherries -167 gm
    • Orange rind- 1
    • Raisins -167gm
    • Black currents-167gm
    • Dried figs -83gm
    • Dates-83gms
    • Black raisins-117gm
    • Chopped almonds – 42 gm
    • Cognac-120ml
    • Treacle / Blackjack-17ml

    Method:

    1. Mix all the dry fruits, Cognac and Blackjack and let it marinate for at least 24 hours.
    2. Sift flour & spice powders together in a bowl.
    3. Cream butter and brown sugar until light and fluffy
    4. Gradually add the eggs one by one
    5. Add flour, spice mixture & chopped almonds to the marinated fruit mixture.
    6. Fold the four and fruit mixture into the butter mixture to form a smooth batter.
    7. Pour batter into a greased pan and bake at 170 degrees C for 20 minutes and 40 mins at 150 degrees C.
    8. Remove from the oven once it’s done.
    9. To ensure the cake is moist and flavorful spray cognac over the crust of the cake and allow it to cool.

    SAN FRANCISCO — Apple is pumping more artificial intelligence into the latest iPhones during the holiday shopping season with a free software update that includes a feature that enables users to create customized emojis within a matter of seconds.

    The Wednesday release of the iPhone’s upgraded operating system, iOS 18.2, extends Apple’s expansion into AI months after rivals such as Samsung and Google began implanting the revolutionary technology on their devices. The update builds upon another one that came out in late October to usher in the AI era for Apple and the iPhone, as well as for the iPad and Mac.

    The latest round of AI tricks includes “Genmojis,” Apple’s description for emojis that iPhone users will be able to ask the technology to create and then share. Apple says it is placing some limits its AI’s emoji artistry to prevent the distribution of violent or hateful imagery. Other features include an “Image Playground” for a variety of AI-styled illustrations, writing tools and options for summarizing emails.

    The technology won’t work on iPhones that Apple made before 2023 because it requires a special processor that isn’t in older models. The AI will work on the iPhone 16 line-up that came out in September and the premium iPhone 15 models released last year.

    That exclusivity is expected to propel a cycle of iPhone upgrades during the current holiday shopping season into next year, driving up Apple’s profit even higher from the $94 billion that the Cupertino, California, company pocketed in its last fiscal year ending in September. That expectation is the main reason Apple’s stock price has climbed by about 30% so far this year to push the company’s market value closer to the $4 trillion threshold for the first time.

    Apple is broadening the AI suite’s appeal by including English versions tailored for Australia, Canada, Ireland, New Zealand, South Africa, and the U.K. that are included in the latest software update.

    Although the iPhone’s AI is similar to many of the features that have already been available from other companies, Apple is taking a slightly different approach to the technology in an effort to stand out from the rest of pack. It is emphasizing its ongoing commitment to protecting iPhone users’ privacy by processing most of its AI on the device itself or corralling it in a secured data center. Users seeking more AI wizardry than the device or the special data center can handle will have the option to reach out to the popular ChatGPT technology made by OpenAI, which has forged a partnership with Apple.

    RIDGE, N.H. — The Shepherd University women’s soccer team’s historic 2024 season ended in an Elite Eight matchup with Franklin Pierce on Saturday afternoon.

    Sophomore midfielder Jenni Huttunen led the Ravens to a 2-1 victory with two goals in the second half, one of which was a penalty kick.

    Junior midfielder Josie Beezel scored the Rams’ lone goal in the final eight minutes of play on an assist from sophomore midfielder Reagan Ackermann.

    By the final whistle Franklin Pierce had outshot Shepherd 16-8 however, the Rams outshot the Ravens 5-4 on goal.

    “We played fantastically today, I think by all accounts we were the better team,” Shepherd head coach Sam Odell told Shepherd University Athletics.

    “We dominated chances, territory, hit the bar twice, and had a couple cleared off the line, but it wasn’t our day.

    I couldn’t be prouder of the team and their accomplishments this season. This is not the way we wanted the story to end, and it’s especially tough for it to be in this manner – sometimes you just wish that you were second best as it can be easier to accept when that happened, but that was not the case today.

    We had a really good chance of winning the national championship this year and are devastated to be going out in the Elite Eight. That speaks volumes for the team’s goals and standards this season. This year we won all three trophies available, won 18 games, and have become a force on the Division II stage.

    We will be back here next year, and knowing this amazing group as well as anyone, they will use this experience as fuel to win the national championship next year.

    I am a proud and disappointed coach at the same time today, but I love this team and couldn’t be prouder of them for how they played today and all season. We have an amazing group that has a special collective quality which is so powerful when they channel it. We will be back.” Odell concluded.

    The Rams may have seen their historic season end in heartbreak, but their journey will be remembered as a turning point for the program.

    With a record-breaking 18-2-4 season, their first Pennsylvania State Athletic Conference championship and a spot in the Elite Eight, the Rams solidified their place as a rising power in Division II soccer.

    This season was not just about victories but about setting a new standard for what Shepherd women’s soccer can achieve.

    With a core of talented players and a coach who believes in their potential, the Rams are already looking ahead. Shepherd has proven their unwavering grit, determination and ability to come together as a cohesive unit as they are set to come back stronger next year with hopes of turning their national championship dreams into a reality.

    At the 2024 World Athletics Awards, Letsile Tebogo was named the World Athlete of the year in the men’s category. Courtesy to his historic win in Paris as the first African Olympic Champion in the 200-meter, the 21-year-old received the honor in Monaco on 1st December. “This means a lot. It was a real surprise to hear my name because I didn’t expect this.” Tebogo, who also claimed the award in the men’s track athlete category, stated in an interview.

    This honor for Tebogo, who competed in the Olympic year with the search of “doing something great for the continent,” was truly impressive, as he edged out many strong 2024 Olympic champions, including Norway’s Jakob Ingebrigtsen. Team U.S.A. also provided three strong athletes, Rai Benjamin, Grant Holloway, and previous year winner Noah Lyles, competing for the honor.

    Tebogo’s numbers for the year speak for themselves helping him receive the top honour in Monaco. Apart from his Olympic wins, he also set new records and clocked several top performances in 2024.

    Letsile Tebogo’s 2024 Season

    Tebogo maintained consistent outings throughout the year in the 100-meter, 200-meter, and 300-meter events. The 21-year-old athlete’s eight out of ten top results have been clocked in the 2024 season. In the 200-meter dash, after winning the ASA Athletics Grand Prix in 19.44 in March, the double world medalist made his Kip Keino Classic debut in April, claiming second place. The athlete who led the race till the final laps clocked another sub-20 time of 19.71.

    However, his top performance in the 200-meter was his Olympic gold win at the Stade de France, winning the race in an African record 19.46. Tebogo’s time was also faster than Noah Lyles’, who again claimed bronze in the event.

    Maintaining his outings after Paris, in September, during the Zurich Diamond League meet, the African record holder also surpassed 200-meter silver medalist Kenneth Bednarek to win the meet in 19.55. Lastly, Tebogo concluded his season with silver at the Diamond League Final in Brussels in 19.80, helping him claim nine sub-20 second races in the 200-meters this season.

    “We didn’t even count how many 19-second races I ran in this season. Because it was Olympic year, there was just that drive in me that wanted to keep on going,” Tebogo stated in an interview despite not participating in a few races this year.

    Apart from this, he has also performed great in the 100-meter dash, setting two national records this season. At the Diamond League meet in London, the silver medalist from the 2023 Worlds rounded to the podium in 9.88 seconds to match his own national record. Following this, at the 100-meter Paris Olympic finals, Tebogo, despite finishing sixth, managed to lower the national record to 9.86.

    Interestingly, in the 300-meter, Tebogo showcased stellar performance as early as in February. At the Simbine Curro Classic, he set a new world record in the event. He finished the race in 30.69, taking more than a tenth of a second (0.12) off the previous record time of 30.81 set by Rio Olympics 400-meter winner Wayde Van Niekerk in 2017.

    In essence, Tebogo’s 2024 season has been a truly great one. The 21-year-old now looks forward to the next season with a new approach. As the Botswana sprinter “is going to be changed and a mature one” for the year 2025.

    Tis the season to embrace lifestyle habits that will help you during the holiday season.

    The holiday season is upon us, and it can come with a mix of emotions if you have been trying to focus on your health goals. An increase in festive parties, family gatherings and seasonal foods can mean increased temptations to eat more often.

    There is a common thought that “When January comes; I’ll get back on track.” Unfortunately for a lot of people, “getting back on track” is difficult to accomplish. Here are some tips to be intentional with your lifestyle habits and not find yourself frustrated with a lack of motivation when the New Year starts.

    Change your mindset. Approach the holiday season with a more holistic outlook. The special treats and foods are lovely but not the sole enjoyment of the season. Seeing loved ones we do not see often, making special memories with seasonal events and providing support/resources to those who are missing loved ones or struggle with basic needs can provide joy.

    Do not take off from the gym or whatever physical activity you have been doing. When time constraints arise, exercise is the first thing to go. Avoid the trap of all-or-nothing thinking – meaning if you cannot do your normal 45-minute exercise class/video/workout, what can you do instead? Do you have time for 10 minutes? Can you be smarter about your time management as opposed to working harder? Increase movement in the day by taking the stairs, getting away from your desk more often or parking farther away. Would this be the time to explore seasonal activities with your loved ones, such as going sledding, snow shoeing or walking around the neighborhood? In physical movement, something is better than nothing at all.

    Avoid skipping meals. Whether it is a busy schedule or thinking you can “bank” your calories for the festive meal later, skipping any meal during the day can affect your hunger/fullness hormones. When we skip meals, the hormone that tells us to eat increases, and the hormones that tell us we don’t need to eat decreases. That’s a recipe for overeating.

    Aim for balance. The nutrients we eat help our body function for everyday use. If we are not eating essential nutrients that we get from a variety of food groups (fruits, vegetables, whole grains, protein and dairy) each day, we cannot feel the energy and control of our hunger. That can increase our chances of eating quick, highly processed foods that are stripped of nutrients, which can leave us feeling hungry more often and sluggish. To keep up with the busy holiday season, fuel your day with a variety of foods from the food groups and aim to eat about every three to five hours.

    Hydrate: Our body is at least 60 percent water; therefore, we need to stay adequately hydrated. Staying hydrated can get away from us during the busy season or the cooler months, since we may not feel thirsty. A rule of thumb is, if we start to have some signs that indicate we are dehydrated (dry lips; tiredness; dry mouth; passing urine less often, or when we do pass, it is a darker color), that will indicate mild dehydration. Water is the best option to hydrate, but if you want flavor to your water, aim for noncalorie, noncaffeine options. Caffeine can act as a diuretic, meaning it can make you to want to go to the bathroom more often, causing issues with dehydration. For every cup of coffee (12 ounces), add an additional 8-ounce cup of water to your daily goal. A good goal for total fluid intake to hydrate is half of your current body weight in ounces. So, for example, if you are 200 pounds, half of your body weight would be 100 in fluid ounces as the goal to stay hydrated.

    Progress, not perfection: We live in a society that often makes it hard to reach our health goals. Try to focus on what you have control over, as opposed to what is out of your control. For example, you can’t control what is served by a family or friend at a get together, but you could control the amount you eat (portion control). You can’t control the weather (too cold, concerned about slipping on ice) but you can control exercise indoors, such as doing an exercise video or chair exercises.

    A gratifying win to end a lengthy drought was well with the Aggies’ grasp, but they failed to deliver the knockout punch. Instead, it was a memorable Senior Day for Colorado State, coupled with a collapse of epic proportions for Utah State. The Rams went on a 29-0 run during a stunning 12-minute stretch of the fourth quarter to turn a 30-13 deficit into a 42-30 lead en route to a 42-37 victory over the Aggies in a Mountain West football game on Friday afternoon at Canvas Stadium in Fort Collins, Colorado. CSU terminated a five-game losing streak against USU, plus kept its Mountain West Championship contest hopes alive, in the process. Nevada must beat No. 21 UNLV in Las Vegas on Saturday in order for CSU (8-4, 6-1 MW) to secure its spot against Boise State in next Saturday’s MW title tilt. Conversely, the Aggie (4-8, 3-4) were oh so close to beating a bowl-bound opponent for the first time since November of 2022 and capping off an injury-plagued, adversity-laden season with a three-game winning streak. Had USU prevailed, it would have went 4-1 over its last five games, to boot. “A tough one there,” USU interim head coach Nate Dreiling said. “We came out playing pretty well and just kind of collapsed in the fourth quarter, too many critical errors to win vs. a really good Colorado State team. But Colorado State did a good job of answering and finding ways to get points and to continue to battle. But it came down to us and discipline, and we just didn’t have it and let that one slip away, so that’s a tough one to end (the season) on.” The Aggies were in great shape to avoid any fourth-quarter drama — which has been a recent staple in the USU-CSU series — as defensive back Jaiden Francois came through with a 40-yard pick-six with 49 seconds remaining in the third. A CSU pass was broken up by USU cornerback JD Drew and snared in the air by Francois for his second interception return to the house in as many seasons. Additionally, it was USU’s first defensive TD of the season. This massive play gave the visitors a seemingly comfortable 30-13 lead, but the hosts were undaunted. The Rams took full advantage of a pair of Aggie turnovers during their aforementioned, monumental 29-0 run. A USU fumble just outside the red zone loomed especially large. Another play the Aggies would surely love to get back was an in-stride 29-yard pass from Brayden Fowler-Nicolosi to Dane Olson on a fourth-and-nine play in CSU territory midway through the fourth quarter. USU was nursing a 30-21 lead at the time. “If we get off the field on a fourth-and-nine (play) that ballgame’s over, (but) they completed a good pass for a 45-yard gain or whatever it was,” Dreiling said. “So, that’s what college football comes down to. The margin of error is very, very slim and you have to capitalize … when the moment comes, and Colorado State got it today, so hats off to them.” USU bottled up CSU’s potent rushing game as the hosts only managed 84 yards on 29 attempts — nearly 100 yards shy of their season average. However, the Aggies were unable to keep Fowler-Nicolosi at bay as he completed 31 of 46 passes for 370 yards and four TDs. “I’m really proud of the D-line,” Dreiling said. “That’s a (CSU) team that wants to run the ball 60 times a game and keeping them under 100 is truly remarkable, especially (since) we had extreme trouble stopping the run the first half of the season. And those young guys continuing to battle and coming back to work and getting better and better, and now holding one of the bigger rushing attack teams in the country to under 100 yards shows you the mentality this team had the whole year of constantly improving.” The Rams appeared to be in complete control, up 42-30 following Fowler-Nicolosi’s 26-yard pass to Vince Brown II on a well-executed fourth-and-two play with 1:37 remaining in the contest. Nevertheless, it still ended up being another zany USU-CSU conclusion. USU quarterback Bryson Barnes, filling in for the injured Spencer Petras, found wide receiver Otto Tia in the end zone for a 2-yard TD with 14 seconds remaining. A missed 44-yard field goal goal and a failed two-point conversion pass prevented USU from taking an early three-possession lead. Barnes powered his way into the end zone from 1 yard out with 6:17 remaining in the first quarter and then tossed a 2-yard TD to Tia four minutes later. CSU pared its deficit to 13-3 on a 33-yard Jordan Noyes field goal with 10:28 left in the second quarter, but USU immediately answered with a 26-yard field goal by Tanner Cragun. It was a rough end to the opening half for the Aggies, though, as the Rams scored 10 points during the final 104 seconds of actual game time. Noyes booted a 40-yard field goal with 1:44 left and then Olson turned a short pass from Fowler-Nicolosi into a 28-yard TD with 19 seconds remaining. Olson entered the contest with only 130 yards receiving on the season, but was a thorn in USU’s side as he accounted for 140 yards on five Friday receptions. The Rams were in good shape to knot things up at 16-16 less than five minutes into the third quarter, but Noyes was well off the mark on a 40-yard field goal attempt. USU seemingly seized control in the final 67 seconds of the quarter as it capped off an epic 15-play, 79-yard drive with a nice 14-yard TD pass from Barnes to Tia. The Aggies struck again less than 20 seconds later on the aforementioned pick-six by Francois, who also accounted for his team’s lone sack. Barnes became the first USU signal caller to ever rush for more than 100 yards in back-to-back games. The Utah transfer followed up his program-record (for a QB) 193 yards against San Diego State with 185 on 24 attempts against CSU. The gritty Barnes also threw for 189 yards and the aforementioned three TDs to Tia on 17 of 29 passing, although the two INTs were extremely costly. The Aggies were oh so close to amassing 300-plus yards on the ground in back-to-back-to-back outings as they finished with 296 on 49 attempts. Standout tailback Rahsul Faison was limited by an injury, but still contributed with 66 yards on 12 carries. The senior rushed for 1,109 during the 2024 campaign. USU, which converted on 9 of 15 third downs, accumulated 485 total yards. Conversely, the Rams were only 3 of 14 on third downs, but still managed to produce 454 total yards. Star safety Jordan Vincent recorded a career-high 15 tackles — his ninth double-digit outing of the ’24 campaign — and finished the season with 117 tackles. Cornerback DJ Graham II chipped in with a career-high nine tackles for the Aggies, followed by linebacker John Miller with eight. Graham II also broke up a pair of passes. “Yeah, that was tough,” Dreiling said when asked about his post-game message to his team in the locker room. “(But my message was) just so proud (of them). I mean, the resilience and the toughness that this team has shown since July fifth is just unmatched, it’s not common, doesn’t happen anymore. And the locker room should be so dang proud of sticking together, continuing to show up every single day and then putting a product on the field that makes the community proud. And that’s what college football’s about and there’s no reason they should hang their heads on this loss. They worked their tails off, man, and winning football games is hard. We came a long way (this season) and I’m awfully proud of their resilience.”
