    On my recent visit, we got the full Bonita experience. The night kicked off with a Wild Mushroom Soup-earthy, rich, and the perfect warm-up. Next up were the starters, where the Patatas Bravas brought just the right amount of spicy kick with its tangy tomato sauce and garlic aioli. Then came the Recheado Beets and Burrata – a mix of creamy burrata and sweet beets, all tied together by a burnt citrus dressing that kept things interesting.
    Now, let’s talk pizza! The Smokey Barbeque Chicken Pizza was a real winner, topped with grilled onions, charred corn, and jalapenos. Smoky, savoury, and impossible to share (though we did try). If you’re a pizza lover, this one’s a must.
    For the mains, we tried the Grilled Mushroom Krapow – a fresh twist on a Thai classic with minced mushrooms, sticky rice, and a basil-chili sauce that brought major flavour. But the real star of the show was the Grilled Lobster Spaghetti, tossed in rich black garlic butter with a bouillabaisse emulsion. It was seafood pasta done right and showed just how much care goes into Bonita’s menu.
    To wrap up the meal, we went for the Chilli Pineapple Tres Leches for dessert. This dessert was next-level, with smoky-sweet roasted pineapple paired perfectly with the light and fluffy tres leches – just the thing to end on a high note.

    Sports Betting: UConn favored for men, South Carolina for women in college basketball

    When the college basketball season starts next week, UConn will be trying to become the first men’s team to win three straight national championships since UCLA won seven straight from 1967-73.

    At the BetMGM Sportsbook, UConn opens the 2024-25 season +850 to win the national championship — tied for the shortest odds with Kansas.

    For the women, South Carolina is looking to win back-to-back titles. That hasn’t happened since UConn won four straight years from 2013-16.

    South Carolina has the shortest odds at +150 to win it again.

    Men’s national championship betting

    Both UConn and Kansas have seen their odds improve since opening last spring. The Huskies opened at +1200, while the Jayhawks opened at +1100.

    While those two teams have the shortest odds, they are not the most popular team among bettors.

    Duke (+900) is drawing the most money (14.5%) on the most tickets (13.3%). UConn is next, drawing the second-most money (13.8%) on the second-most tickets (10.4%). Kansas rounds out the top three with 8.5% of the money on 9.9% of the tickets.

    As for other teams with short odds, Alabama is +1200, while North Carolina, Iowa State and Baylor are all +2000.

    Women’s national championship betting

    South Carolina has the shortest odds, but bettors don’t seem to be expecting them to win again. The defending champions are taking in the fourth-most money (14.2%) on the fourth-most tickets (10.5%).

    UConn (+375), USC (+375) and Notre Dame (+900) are all more popular.

    The Huskies are drawing the second-most money (21.7%) on the most tickets (23.8%), while the Trojans are drawing the most money (25.3%) on the second-most tickets (12.4%). The Fighting Irish are pulling in the third-most money (17.3%) on the third-most bets (12.4%).

    Texas (+600) has better odds than Notre Dame, but are only taking in 4.8% of the bets and 1.7% of the money.

    Wooden Award betting

    Three players are the favorites to win the Wooden Award, given to the nation’s best player.

    RJ Davis of North Carolina and Mark Sears of Alabama are +700, while Hunter Dickinson of Kansas is +750. No other player is less than +1100.

    Sears is bringing in a massive 29.3% of the money on the second-most bets (13.2%). Dickinson is drawing the most bets (14%), but only 5% of the money. Davis is taking in 5.3% of the bets and 12.1% of the money.

    Cooper Flagg of Duke will be added to the mix once he turns 18 on Dec. 21.

It’s also a time for Diwali savouries that complement an array of sweets. In many homes across Tamil Nadu you will be served sweet, kaaram and kaapi (coffee). We’ll put the focus on the kaaram or savouries with three unique recipes that you can try at home:

    Recipe – Kavuni Arisi Murukku

    This is a unique twist (Murukku gets its name from the twists) on the classic murukku (chakli), which is made with black rice. Many experts consider black rice (or kavunni arisi in Tamil) a superfood because of the presence of anthocyanin, a powerful antioxidant. Black rice is also rich in fibre and is a source of phytonutrients that cleanse the body. This unique rice varietal adds a unique chocolate brown hue to this murukku:

    Ingredients:

    • 1 cup black rice (Kavuni arisi)
    • 1/4 Cup gram flour
    • 1 tbsp red chilli powder
    • 2 tbsp ghee
    • 1/4 tbsp Asafoetida
    • 1 tbsp White sesame seeds
    • Oil for deep frying
    • Salt to taste
    • Water as required

    Method:

    • Wash the black rice. Soak the rice for at least two hours.
    • Drain water and spread it on a cloth; let it dry completely.
    • Grind the black rice to a fine powder in a mixer.
    • Add the powdered black rice, gram flour, asafoetida, sesame seeds, red chilli powder, salt and ghee in a bowl and mix well.
    • Add water as required, and knead it to make a soft dough; add oil and knead again.
    • Use a murukku mould, fill the prepared dough in and press to get the perfect shape as you squeeze it into hot oil.
    • Deep fry till crisp on medium hot oil and flip over to fry both sides evenly.
    •  Drain out the extra oil with tissue paper once it’s fried to perfection.Store in an airtight container once it cools down.

    Recipe – Ribbon Pakoda

    Takes its name from the unique ribbon shape (that you can achieve with the right mould).

    Ingredients:

    • 1 cup gram flour
    • 1 cup rice flour
    • 1 tsp asafoetida
    • 3/4 tbsp red chilli powder
    • 1 tbsp sesame seeds (white)
    • 1 tbsp melted butter
    • 1 tbsp oil
    • Salt and water – to taste
    • Oil For deep frying

    Method:

    • Mix the rice flour, gram flour, red chilli powder, melted butter, oil, asafoetida and salt in a bowl, and mix well.
    • Keep adding small quantities of water to make a non-sticky dough.
    • Use a ribbon pakoda mould. Fill the dough in the mould and press the dough into hot oil in a circular motion to form a single layer.
    • Flip the pakoda to fry both sides evenly.
    • Drain out the extra oil with tissue paper once it’s fried to perfection.
    • Store in an airtight container once it cools down.

    Recipe – Karuvapellai Murukku

    I first came across this interesting twist to the murukku at Anandas in Coimbatore, one of the city’s most popular vegetarian restaurants and sweet shops. Anandas has an array of interesting savouries including a beetroot murukku with its red velvet hues and the karuvapellai (curry leaf) version that incorporates the flavours and goodness of curry leaf.

    Ingredients:

    • 1 cup rice flour
    • 1/4 cup roasted gram flour
    • 1/2 cup curry leaves tightly packed
    • 3 green chilis
    • 2 garlic pods
    • 1 tbsp cumin seeds
    • 1 tbsp sesame seeds
    • 1 tbsp melted butter
    • 1/4 tbsp asafoetida
    • Oil for deep frying
    • Salt as required

    Method:

    • Add rice flour, roasted gram flour, cumin seeds, sesame seeds salt, and asafoetida in a bowl.
    • Add melted butter and mix well.
    • Grind the curry leaves, garlic and green chilli along with water. Filter it before you add this to the flour mixture.
    • Knead the dough well, cover it with a cloth and set it aside for 5 minutes.
    • Use a murukku mould, fill the prepared dough in the mould and press to get the perfect shape as you squeeze it into hot oil.
    • Deep fry till crisp on medium hot oil and flip over to fry both sides evenly.
    • Drain out the extra oil with tissue paper once it’s fried to perfection.
    • Store in an airtight container once it cools down.

    Sizzling Semin Razman leads Wheaton Warrenville South to first-ever DuKane title – Shaw Local

    Wheaton Warrenville South’s players rushed the field toward the main grandstand Tuesday night.

    The Tigers wanted to celebrate a rare achievement in recent program history with the large throng of faithful fans who endured a cold, winter-like evening of soccer.

    By beating St. Charles East 4-1, the Tigers secured their first-ever DuKane Conference championship in the seventh year of the league– and their first conference championship since 2009, according to Wheaton Warrenville South coach Guy Callipari.

    The Tigers (11-5-5, 6-0-1) rode the sizzling foot of junior midfielder Semin Razman to a convincing victory over the Saints. Razman recorded a hat trick to run his season total to 21 goals, scoring the first three goals for the Tigers before reserve Liam Smeir added the final goal with three seconds left.

    Razman said the Tigers’ season took a positive turn following a 4-0 loss to Maine South in a bracket title game of the BODYARMOR Series on Sept 29 at Lyons Soccer Complex. Since then, the Tigers have yet to lose a game, posting a 7-0-1 record.

    “It feels great because we’ve worked toward this goal all season,” Razman said. “We’ve put a lot of blood, sweat and tears. It feels great. We came out on top and felt like we worked so hard for it and deserved it. I feel it comes down to how much we want it. After our loss in the BODYARMOR final, it humbled us and we learned how to connect with each other and know where everyone is making those runs. We figured out our team and we’re looking really good.”

    Wheaton Warrenville South senior defender Quintin Oker, who missed the Maine South defeat due to an illness, showed his worth to the backline over the final month of the season.

    “It feels awesome because we’ve been talking about this since our freshman year,” Oker said. “We’ve been talking about how good this team could be, so it’s nice to see everything come together. We had a great win and played as a group. I think BODYARMOR was a wake-up call for the team. We really needed to lock in and started to take practice seriously and came together as a group. We’ve been undefeated since that loss.”

    Callipari took a relaxed approach to the conference championship by keeping his emotions in check, but the veteran coach did cherish the accomplishment.

    “I’m really happy for the guys, especially our senior class,” Callipari said. “I’ve known some of them, like Jet Oehrlein, since he was seven years old, so to see their effort pay off in the way it has and going undefeated in this conference is an incredible feat.”

    The Tigers have a familiar foe in their Class 3A regional semifinal playoff opener, playing at host St. Charles East on Tuesday.

    Glenbard Cup set for tonight

    Glenbard West is seeking its fourth consecutive Glenbard Cup in Thursday’s road game against Glenbard North.

    Glenbard West coach Phil Wicyk laid out a basic gameplan to knock off the Panthers.

    “The big thing about this game for our program is we want to win our fourth straight,” Wicyk said. “We want to defend it again. On top of that, the big thing also is we need some momentum going into the playoffs. We’ve been on a rough skid playing some tough competition lately in Wheaton Warrenville South, Hinsdale Central, Romeoville, Oak Park-River Forest. The results didn’t go our way in those games, so we’re looking for some type of confidence heading into the playoffs.”

    Glenbard West (12-8-3, 3-3-0 West Suburban Silver) is trying to get back on the right track in an up and down season filled with severe highs and lows.

    “The big thing we need to prepare for Glenbard North is to take advantage of where I see a weakness,” Wicyk said. “We have to control the midfield and maintain it and also we have to find success on the outside and be able to win the one-on-one battles. We’re looking forward to a great game.”

    Glenbard North (5-10-4, 2-4-1 DuKane Conference) is looking to continue its recent run of positive results after beating Wheaton North 4-0, losing 3-1 to Wheaton Warrenville South and defeating Batavia 5-1 on Tuesday.

    Extra time

    York nearly became the second team to lose at Timothy Christian last Friday night. A week after Timothy Christian defeated Wheaton Academy in double-overtime in front of 2,000 fans, the Dukes scored on a penalty kick in the 61st minute to secure a 1-1 draw against the Trojans…Fenwick captured its first win of the season by knocking off St. Francis on Senior Night. The Friars (1-12-3) have lost seven games by one goal this season.

    Chettinads Kalkandu Vadai Gives A Sweet Twist To South Indian Breakfast Staple (Recipe Inside)

    It was in Karaikudi in the heart of Chettinadu, in Southern Tamil Nadu that I attempted to describe a vadai or vada to my American friends who had tagged along with me for a food trail in the state. Sandwiched in the arid belt between Pudukottai and Ramanathapuram are the 70-odd villages and towns that make up Chettinadu. The easiest comparison for a vada is a doughnut. Just like a doughnut, the vada has a hole in the centre and it’s deep-fried. It’s also a breakfast staple in many parts of South India. But there are a couple of major differences.
    The most obvious difference is the batter. A typical medu (for soft) vada is crafted with urad dal while a doughnut uses flour dough. A vada is usually a savoury dish that’s eaten with sambar or chutney. At least that’s what we all think. That’s if you’ve not been to Chettinadu and have tried a special from the region called a kalkandu vadai or a sweet vadai.

    Weddings are an elaborate affair in the Chettinadu region. The culinary journey does not stop with breakfast and lunch. There’s an elaborate tea menu as the bride and groom leave for the groom’s house. Aadi Kumayam (Lentil and rice halwa) and the Rangoon Puttu are traditional favourites. And then there’s a dinner at the groom’s house to welcome the bride where a long list of heavy snacks, savouries and sweets are served. It was at one of these dinners that I first tried the Kalkandu vadai.
    Kalkandu refers to rock candy or mishri in Hindi. This unique twist to a vadai is made with powdered rock candy and sometimes served with rock candy for its unique textures and extra sugary appeal. This was an easier version of the vadai for my American friends to comprehend and draw parallels with a classic American doughnut. Except it’s not a dish that’s widely served across Tamil Nadu or South India. While it’s best known as a Chettinad Kalkandu vadai and served during special occasions and festivals, I discovered that it’s also possible to add crushed jaggery (instead of sugar candy) to the recipe.

    Recipe – Sweet Vadai

    Ingredients:

    • 1 cup urad dal 
    • 1/4 cup crushed jaggery 
    • 1 cup sugar for making sugar syrup 
    • A pinch of salt 
    • 1/2 tsp cardamom powder 
    • Oil (for deep frying)
    • Water for the sugar syrup

    Method:

    • Wash and soak the urad dal for about two hours.
    • Grind the dal to a coarse thick paste without adding water.
    • Add the crushed jaggery and grind until the batter gets fluffy.
    • Make single-string consistency syrup with sugar and water. Add cardamom powder to the syrup. Add a pinch of salt to balance the sweetness.
    • Make balls out of the batter (the size of a lemon). Flatten it and make a hole at the centre with a finger.
    • Drop slowly into hot oil and fry the vadai on both sides on a medium flame until golden brown.
    • Remove with a vadai strainer and dip them in the sugar syrup for about 3-5 minutes.
    • Remove the vadais from the syrup, transfer them to a plate and serve hot.
    • You could sprinkle some sugar candy (kalkandu/mishri) if you’d like.

    You will notice that the recipe is similar to the traditional medu vadai (you can try this recipe at home too).

    Recipe – Medu Vada/Ulundhu Vada

    Ingredients:

    • 1 cup whole urad dal
    • 2 green chillies finely chopped
    • 1/2 cup onion finely chopped
    • 1/2 tbsp ginger finely chopped
    • 1 tbsp  black peppercorns
    • 1/2 tbsp cumin seeds
    • One sprig of curry leaves finely chopped
    • A pinch of asafoetida
    • Salt (to taste) 
    • Cold water (as required)
    • Oil for deep frying

    Method:

    • Wash & soak urad dal for 2 hours. 
    • Add urad dal in small quantities while grinding. Sprinkle cold water now at regular intervals as you grind the batter till it gets fluffy.
    • Transfer the batter to a bowl, and add the chopped onions, green chillies, ginger, black peppercorns, curry leaves, salt and asafoetida.
    • Stir well and keep aside.

    What’s behind the northern lights that dazzled the sky farther south than normal

    Another in a series of unusually strong solar storms hitting Earth produced stunning skies full of pinks, purples, greens and blues farther south than normal, including into parts of Germany, the United Kingdom, New England and New York City.

    There were no immediate reports of disruptions to power and communications.

    The U.S. National Oceanic and Atmospheric Administration issued a severe geomagnetic storm alert on Wednesday after after an outburst from the sun was detected earlier in the week week. Such a storm increases the chance of auroras — also known as northern lights — and can temporarily disrupt power and radio signals.

    NOAA’s Friday forecast shows continued higher-than-normal activity, but the chances for another overnight show are slim farther south of Canada and the northern Plains states.

    The sun sends more than heat and light to Earth — it sends energy and charged particles known as the solar wind. But sometimes that solar wind becomes a storm. The sun’s outer atmosphere occasionally “burps” out huge bursts of energy called coronal mass ejections. They produce solar storms, also known as geomagnetic storms, according to NOAA.

    The Earth’s magnetic field shields us from much of it, but particles can travel down the magnetic field lines along the north and south poles and into Earth’s atmosphere.

    When the particles interact with the gases in our atmosphere, they can produce light — blue and purple from nitrogen, green and red from oxygen.

    Solar activity increases and decreases in a cycle that last about 11 years, astronomers say. The sun appears to be near the peak of that cycle, known as a solar maximum. It’s not clear exactly when the cycle will begin to slow.

    In May, the sun shot out its biggest flare in almost two decades. That came days after severe solar storms pummeled Earth and triggered auroras in unaccustomed places across the Northern Hemisphere.

    NOAA advises those who hope to see the northern lights to get away from city lights.

    The best viewing time is usually within an hour or two before or after midnight, and the agency says the best occasions are around the spring and fall equinoxes due to the way the solar wind interacts with Earth’s magnetic field.

Well, we could spot a variety of dishes on their table, including dosas, medu vadas, and what appeared to be masala idli fry. These were, of course, paired with sambhar, coconut chutney and tomato chutney. They concluded the meal on a sweet note with payasam garnished with chopped almonds.
