    3 Anytime Coolers From South India that Do More Than Quenching Your Thirst

    Kochi is one of my favourite food cities in India. On one of my many visits to explore the city’s ever-evolving food scene, I discovered the city’s most popular cold beverage. The Kulukki literally translates to shaken, this one’s even more shaken than any cocktail you will find at your favourite bar. The popularity of this beverage has been fuelled by Instagram. The sight of kuluki ‘artists’ flinging your glass and cocktail shaker in the air has been captured numerous times in food reels from Kochi. There are multiple concoctions including my favourite where raw mango is blended with ginger. Unless you’re a mixologist, we’d have to give you the statutory warning “These stunts have been performed by trained experts. Do not try this at home”

    Not all summer coolers or afternoon coolers from South India require such extreme juggling skills. We’ve rounded up three cool beverages that you can actually try making at home. While these are perfect for the summer, they are equally satisfying around the year when you need a refreshing beverage that also cools you down.

    Nannari Sarbath Recipe

    Almost every time I sip on this refreshing beverage, I’m transported to another great culinary destination in Kerala. One of the most popular food stops in Kozhikode is Paragon restaurant, a local establishment that has become synonymous with the city’s love for biryani. Just across the road from the flagship outlet of Paragon on Kannur Road is the Nannari Sarbath Stall. This busy outlet on the street has no signage and serves just two versions of the nannari sarbath including one blended with milk. This beverage gets its flavour from Nannari (Sarsaparilla) and is also a great accompaniment for a spicy meal: 

    Ingredients 

    • Juice of half a lemon 
    • 2-3 tbsp Nannari Syrup 
    • 1 tall glass of chilled water 
    • 5 ice cubes 
    • 1 tbsp of soaked sabja (basil) seeds (Optional)
    • A pinch of salt 

    Stir all ingredients after adding one ingredient at a time with ice and serve chilled

    Kambu koozhu (Pearl millet porridge) Recipe

    Many homes across Tamil Nadu’s urban centres have rediscovered the magic of millets. Quite a few organic stores or smaller stores that sell local ingredients have a wide selection of millets on offer. Kambu is the Tamil name for pearl millet. This delicious and healthy drink is sold across the state, especially in the warmer months: 

    Ingredients 

    • 1 cup broken kambu (pearl) millet 
    • 3 cups of water to cook the millet
    • 2 cups thick buttermilk 
    • Sliced Green chillies & shallots (to taste) 
    • Salt (to taste) 

    Method

    1. Soak millets in water for an hour. 
    2. Drain the water completely. 
    3. Add three cups of water to a heavy bottom vessel and add the (drained) millets to it.
    4. Start cooking on medium heat and keep stirring to avoid lumps. Cook until thick and then let it cool down completely.
    5. Moisten your hands and roll the mixture into balls.
    6. Partially immerse these balls in a bowl of water and refrigerate for 2 hours.
    7. Take a small portion from the millet ball along with a little water used for soaking. Mix well without lumps. 
    8. Add salt & buttermilk and mix well till you reach the desired consistency.

    You can serve this with sliced shallots and green chillies. Many homes also serve it with a pickle or sun-dried chillies that are char-fried.  

    Sambaram (Kerala-style buttermilk)

    Of all the versions of buttermilk in South India I have a predilection for the sambaram. It’s probably because of its unique flavours and ingredients and my memories of the first time I tried this refreshing beverage on a hot summer’s day in Thrissur. I’ve tried different versions of the sambaram across Kerala and almost every home and region has its own twist. 

    Sambaram flavoured with lemon leaves: combine ginger, green chillies, curry leaves and crushed lemon leaves with buttermilk in a blender. You can substitute the lemon leaves with a small quantity of lemon juice. 

    Sambaram with shallots: combine green chillies, curry leaves and finely chopped shallots with buttermilk in a blender. This is a version I’ve tried in Southern Kerala and the shallots add a unique flavour twist.

    Stuffed Paniyaram Recipe: A Clever New Twist To Classic South Indian Snack

    Almost every day we see a new food trend take the Internet or social media by storm. There are some trends that we wish would disappear by the end of the week. But there’s one trend in Chennai that we’re happy has stayed the course – the stuffed paniyaram or the stuffed kuzhi paniyaram. This trend is also playing out at WelcomCafe Marina, the all-day dining destination at the Welcomhotel Chennai Cathedral Road that has returned after a major overhaul.

    One of the most scrumptious snacks in South India, the kuzhi paniyaram takes its name from the kuzhi or the depressions in a special pan that are purposed for these delicious dumplings. It’s one of the most popular street food dishes in many parts of South India (It’s called guliyappa in Karnataka).

    The WelcomCafe Marina offers a special selection called Taste of Madras that reimagines some of the popular streets of Chennai and beyond. The menu has room for a clever rasam ramen and a Kozhi (chicken) ghee Roast Slider but it’s the stuffed paniyaram that caught our attention. There’s a Beans Vepudu Paniyaram Takoyaki that’s embellished with kempu chutney, homemade mayonnaise, sesame seed, peanut, and crackling spinach. There’s also a bold play on a pork dumpling – the Pork Paniyaram Takoyaki with a similar stuffing.

    We’re seeing quite a few restaurants and bars across the city experimenting with the paniyaram. The basic recipe remains the same, it’s the filling that is the twist. We’ve seen chefs getting quite creative with the fillings of these stuffed paniyarams. From salmon and cream cheese to paneer and potato, we’ve seen it all. You can try making these paniyarams at home (Try our flavourful masala stuffed paniyaram – see recipe) or you can try the classic paniyaram (see recipe).

    Beans Paniyaram

    Masala Stuffed Kuzhi Paniyaram Recipe

    Ingredients 

    • 3 medium-sized potatoes –  boiled & mashed 
    • 1/2 tbsp Turmeric powder 
    • 1 tbsp Red chilli powder 
    • 1 tbsp Mustard seeds
    • 1 tbsp Cumin seeds
    • 1/4 tbsp Asafoetida 
    • 1 sprig Curry leaves (finely chopped)
    • 2 cups paniyaram batter 
    • Salt as required 
    • 3-5 tbsp Oil 

    Method:

    1. Heat oil in a pan, add the mustard seeds, cumin, turmeric powder, salt, red chilli powder, asafoetida and curry leaves. Fry the masala for a minute on a low flame, add the mashed potato to the tempering and mix well. Keep the filling aside. 
    2. Add finely chopped onions, ginger, green chillies and curry leaves to the paniyaram batter; stir well.
    3. ‘Temper’ the batter with mustard seeds, cumin seeds and asafoetida.
    4. Grease the paniyaram pan with oil & turn on the flame and heat for a minute. 
    5. Pour a little oil into each mould. Once the oil is heated, pour 1 scoop of batter into each mould. Now with a spoon add a little stuffing in the centre of the batter, now pour more batter to cover the stuffing. Don’t fill the batter to the brim.
    6. Drizzle some oil and cook for a minute. Now flip the paniyaram using a fork, add some more oil and cook till it turns crisp on both sides. Serves best with coconut chutney. You could also serve this with tomato ketchup.

    Classic Kuzhi Paniyaram Recipe 

    Ingredients

    • 1 Cup Idli/Dosa Batter 
    • Medium-sized onion (1) – finely chopped 
    • 2 Green Chillies -finely chopped 
    • 1 tbsp Grated Coconut
    • 1 tbsp Grated Ginger 
    • 1 tbsp Coriander leaves – finely chopped 
    • Salt (to taste)
    • Oil For Cooking 

     
    To Temper

    • 2 tsp Oil (Gingelly / Sesame oil works best)
    • 1 tsp Mustard Seeds
    • 1/2 tsp Urad Dal
    • 1 sprig Curry Leaves
    • 1/4 tsp Asafoetida

     
    Method:

    1. ‘Temper’ the mustard seeds, urad dal, and then add the onions, green chilli, ginger curry leaves and finally the asafoetida. 
    2. Saute it for 2 minutes on a low flame.
    3. Add grated coconut, coriander leaves once you switch off the flame. Add the salt and stir well. 
    4. Add this mixture to the batter. This is the key step. The batter should not be thick or watery.
    5. Mix the batter well.
    6. Use a paniyaram pan, and add oil to each mould. Add more oil if you like your paniyarams crispy. Make sure you don’t fill the mould with batter to the brim (Fill it to 3/4th level)
    7. Cover and cook on a low flame for about 2-3 minutes (keep the pan covered with a lid once you do). Once the bottom is cooked, flip to the other side, pour a little more oil and then cook again for another 2-3 minutes. Use this process for the remaining batter.

     
    This serves best with a tomato chutney or a spicy chutney. You can also serve it with the classic coconut chutney.

    In South Korea, deepfake porn wrecks women’s lives and deepens gender conflict

    SEOUL, South Korea — Three years after the 30-year-old South Korean woman received a barrage of online fake images that depicted her nude, she is still being treated for trauma. She struggles to talk with men. Using a mobile phone brings back the nightmare.

    “It completely trampled me, even though it wasn’t a direct physical attack on my body,” she said in a phone interview with The Associated Press. She didn’t want her name revealed because of privacy concerns.

    Many other South Korean women recently have come forward to share similar stories as South Korea grapples with a deluge of non-consensual, explicit deepfake videos and images that have become much more accessible and easier to create.

    It was not until last week that parliament revised a law to make watching or possessing deepfake porn content illegal.

    Most suspected perpetrators in South Korea are teenage boys. Observers say the boys target female friends, relatives and acquaintances -– also mostly minors —- as a prank, out of curiosity or misogyny. The attacks raise serious questions about school programs but also threaten to worsen an already troubled divide between men and women.

    Deepfake porn in South Korea gained attention after unconfirmed lists of schools that had victims spread online in August. Many girls and women have hastily removed photos and videos from their Instagram, Facebook and other social media accounts. Thousands of young women have staged protests demanding stronger steps against deepfake porn. Politicians, academics and activists have held forums.

    “Teenage (girls) must be feeling uneasy about whether their male classmates are okay. Their mutual trust has been completely shattered,” said Shin Kyung-ah, a sociology professor at South Korea’s Hallym University.

    The school lists have not been formally verified, but officials including President Yoon Suk Yeol have confirmed a surge of explicit deepfake content on social media. Police have launched a seven-month crackdown.

    Recent attention to the problem has coincided with France’s arrest in August of Pavel Durov, the founder of the messaging app Telegram, over allegations that his platform was used for illicit activities including the distribution of child sexual abuse. The South Korean government said Monday that Telegram has pledged to enforce a zero-tolerance policy on illegal deepfake content.

    Police say they’ve detained 387 people over alleged deepfake crimes this year, more than 80% of them teenagers. Separately, the Education Ministry says about 800 students have informed authorities about intimate deepfake content involving them this year.

    Experts say the true scale of deepfake porn in the country is far bigger.

    The U.S. cybersecurity firm Security Hero called South Korea “the country most targeted by deepfake pornography” last year. In a report, it said South Korean singers and actresses constitute more than half of the people featured in deepfake pornography worldwide.

    The prevalence of deepfake porn in South Korea reflects various factors including heavy use of smart phones; an absence of comprehensive sex and human rights education in schools and inadequate social media regulations for minors as well as a “misogynic culture” and social norms that “sexually objectify women,” according to Hong Nam-hee, a research professor at the Institute for Urban Humanities at the University of Seoul.

    Victims speak of intense suffering.

    In parliament, lawmaker Kim Nam Hee read a letter by an unidentified victim who she said tried to kill herself because she didn’t want to suffer any longer from the explicit deepfake videos someone had made of her. Addressing a forum, former opposition party leader Park Ji-hyun read a letter from another victim who said she fainted and was taken to an emergency room after receiving sexually abusive deepfake images and being told by her perpetrators that they were stalking her.

    The 30-year-old woman interviewed by The AP said that her doctoral studies in the United States were disrupted for a year. She is receiving treatment after being diagnosed with panic disorder and post-traumatic stress disorder in 2022.

    Police said they’ve detained five men for allegedly producing and spreading fake explicit contents of about 20 women, including her. The victims are all graduates from Seoul National University, the country’s top school. Two of the men, including one who allegedly sent her fake nude images in 2021, attended the same university, but she said has no meaningful memory of them.

    The woman said the images she received on Telegram used photos she had posted on the local messaging app Kakao Talk, combined with nude photos of strangers. There were also videos showing men masturbating and messages describing her as a promiscuous woman or prostitute. One photo shows a screen shot of a Telegram chatroom with 42 people where her fake images were posted.

    The fake images were very crudely made but the woman felt deeply humiliated and shocked because dozens of people — some of whom she likely knows – were sexually harassing her with those photos.

    Building trust with men is stressful, she said, because she worries that “normal-looking people could do such things behind my back.”

    Using a smart phone sometimes revives memories of the fake images.

    “These days, people spend more time on their mobile phones than talking face to face with others. So we can’t really easily escape the traumatic experience of digital crimes if those happen on our phones,” she said. “I was very sociable and really liked to meet new people, but my personality has totally changed since that incident. That made my life really difficult and I’m sad.”

    Critics say authorities haven’t done enough to counter deepfake porn despite an epidemic of online sex crimes in recent years, such as spy cam videos of women in public toilets and other places. In 2020, members of a criminal ring were arrested and convicted of blackmailing dozens of women into filming sexually explicit videos for them to sell.

    “The number of male juveniles consuming deepfake porn for fun has increased because authorities have overlooked the voices of women” demanding stronger punishment for digital sex crimes, the monitoring group ReSET said in comments sent to AP.

    South Korea has no official records on the extent of deepfake online porn. But Reset said a recent random search of an online chatroom found more than 4,000 sexually exploitive images, videos and other items.

    Reviews of district court rulings showed less than a third of the 87 people indicted by prosecutors for deepfake crimes since 2021 were sent to prison. Nearly 60% avoided jail by receiving suspended terms, fines or not-guilty verdicts, according to lawmaker Kim’s office. Judges tended to lighten sentences when those convicted repented for their crimes or were first time offenders.

    The deepfake problem has gained urgency given South Korea’s serious rifts over gender roles, workplace discrimination, mandatory military service for men and social burdens on men and women.

    Kim Chae-won, a 25-year-old office worker, said some of her male friends shunned her after she asked them what they thought about digital sex violence targeting women.

    “I feel scared of living as a woman in South Korea,” said Kim Haeun, a 17-year-old high school student who recently removed all her photos on Instagram. She said she feels awkward when talking with male friends and tries to distance herself from boys she doesn’t know well.

    “Most sex crimes target women. And when they happen, I think we are often helpless,” she said.

    Here’s how Helene and other storms dumped a whopping 40 trillion gallons of rain on the South

    More than 40 trillion gallons of rain drenched the Southeast United States in the last week from Hurricane Helene and a run-of-the-mill rainstorm that sloshed in ahead of it — an unheard of amount of water that has stunned experts.

    That’s enough to fill the Dallas Cowboys’ stadium 51,000 times, or Lake Tahoe just once. If it was concentrated just on the state of North Carolina that much water would be 3.5 feet deep (more than 1 meter). It’s enough to fill more than 60 million Olympic-size swimming pools.

    “That’s an astronomical amount of precipitation,” said Ed Clark, head of the National Oceanic and Atmospheric Administration’s National Water Center in Tuscaloosa, Alabama. “I have not seen something in my 25 years of working at the weather service that is this geographically large of an extent and the sheer volume of water that fell from the sky.”

    The flood damage from the rain is apocalyptic, meteorologists said. More than 100 people are dead, according to officials.

    Private meteorologist Ryan Maue, a former NOAA chief scientist, calculated the amount of rain, using precipitation measurements made in 2.5-mile-by-2.5 mile grids as measured by satellites and ground observations. He came up with 40 trillion gallons through Sunday for the eastern United States, with 20 trillion gallons of that hitting just Georgia, Tennessee, the Carolinas and Florida from Hurricane Helene.

    Clark did the calculations independently and said the 40 trillion gallon figure (151 trillion liters) is about right and, if anything, conservative. Maue said maybe 1 to 2 trillion more gallons of rain had fallen, much if it in Virginia, since his calculations.

    Clark, who spends much of his work on issues of shrinking western water supplies, said to put the amount of rain in perspective, it’s more than twice the combined amount of water stored by two key Colorado River basin reservoirs: Lake Powell and Lake Mead.

    Several meteorologists said this was a combination of two, maybe three storm systems. Before Helene struck, rain had fallen heavily for days because a low pressure system had “cut off” from the jet stream — which moves weather systems along west to east — and stalled over the Southeast. That funneled plenty of warm water from the Gulf of Mexico. And a storm that fell just short of named status parked along North Carolina’s Atlantic coast, dumping as much as 20 inches of rain, said North Carolina state climatologist Kathie Dello.

    Then add Helene, one of the largest storms in the last couple decades and one that held plenty of rain because it was young and moved fast before it hit the Appalachians, said University of Albany hurricane expert Kristen Corbosiero.

    “It was not just a perfect storm, but it was a combination of multiple storms that that led to the enormous amount of rain,” Maue said. “That collected at high elevation, we’re talking 3,000 to 6000 feet. And when you drop trillions of gallons on a mountain, that has to go down.”

    The fact that these storms hit the mountains made everything worse, and not just because of runoff. The interaction between the mountains and the storm systems wrings more moisture out of the air, Clark, Maue and Corbosiero said.

    North Carolina weather officials said their top measurement total was 31.33 inches in the tiny town of Busick. Mount Mitchell also got more than 2 feet of rainfall.

    Before 2017’s Hurricane Harvey, “I said to our colleagues, you know, I never thought in my career that we would measure rainfall in feet,” Clark said. “And after Harvey, Florence, the more isolated events in eastern Kentucky, portions of South Dakota. We’re seeing events year in and year out where we are measuring rainfall in feet.”

    Storms are getting wetter as the climate change s, said Corbosiero and Dello. A basic law of physics says the air holds nearly 4% more moisture for every degree Fahrenheit warmer (7% for every degree Celsius) and the world has warmed more than 2 degrees (1.2 degrees Celsius) since pre-industrial times.

    Corbosiero said meteorologists are vigorously debating how much of Helene is due to worsening climate change and how much is random.

    In a quick analysis, not peer-reviewed but using a method published in a study about Hurricane Harvey’s rainfall, three scientists at the Department of Energy’s Lawrence Berkeley National Lab determined that climate change caused 50% more rainfall during Helene in some parts of Georgia and the Carolinas.

    For Dello, the “fingerprints of climate change” were clear.

    “We’ve seen tropical storm impacts in western North Carolina. But these storms are wetter and these storms are warmer. And there would have been a time when a tropical storm would have been heading toward North Carolina and would have caused some rain and some damage, but not apocalyptic destruction. ”

    It was a meal at a wine estate near Cape Town, South Africa that sparked an unexpected journey to explore one of the region’s most fascinating cuisines. I spent a whole day checking out the wine scene near Cape Town. A day that took me to four wine estates all within a couple of hours from what has quickly become one of my favourite cities in the world. Le Pommier (Apple tree in French) wine estate was once a flourishing apple orchard (hence the name) that dates back to the 1690s. It’s located between the main route between Stellenbosch and Franschhoek, both wine hotspots. It was here that I first sampled Bobotie, a South African casserole. It took me straight to the area where this dish probably originated and to discover Cape Malay cuisine in one of Cape Town’s most ‘Instagrammed’ spots.

Almost every corner in this grid formerly known as the city’s Malay Quarter is a great spot for pictures. Brightly coloured homes are complemented by cobble-stoned streets in an area that contains the largest concentration of pre-1850 architecture in South Africa. Bo-Kaap Kombuis is a local legend and a restaurant that serves authentic Cape Malay cuisine. So what is this unique cuisine and its origin? A trip to the Bo-Kaap museum in the area is your best bet for a back story that goes back to the days of the Dutch East India company.
    Cape Town developed from the colony set up at Cape of Good Hope by the Dutch. During this period the Dutch also colonised Dutch East Indies (Indonesia) and Dutch Malacca (now in Malaysia – that is also the hub for Peranakan cuisine) from 1641 to 1824. The Dutch brought many slaves from this region that also included Indians many of whom were Muslims. Slavery was abolished in the 19th century after the British took over the area. Most freed slaves began congregating around Cape Town which was the only centre of Islamic faith back then in the region. Bo-Kaap is also home to the historic Nurul mosque established in the 1840s. The community began to be known as the Cape Malay community even though many of them were also from India. The community began to develop its own unique cuisine that is now recognised as one of South Africa’s most unique micro cuisines.

    Yusuf and Nazli who set up Bo-Kaap Kombuis (Cook house) are from the area. I didn’t announce my arrival and opted for one of their three Cape Malay tasting platters and a dessert platter. The tasting platter included a lamb curry, bobotie and a chicken curry that was served with rice, Malay-style sambals and rooti (spelt with an extra ‘o’). Each of these dishes featured a unique burst of flavours. The lamb curry had a unique tamarind twist. The team mentioned how most dishes contain turmeric, cumin and coriander in addition to a masala. Some of the dishes also incorporate cloves, cinnamon and cardamom. While the Malay influence is dominant, you will also see Indian influences and South African elements in the cuisine. The curries are usually paired with rooties. Their layered rooti includes butter, flour and water. It was closer to the Malabar parotta in South India than the roti from Northern India.

    Here’re 5 Classic Dishes Of Cape Malay Cuisine:

    1. Koe’sisters:

    A traditional Cape Malay pastry with a cake-like texture dusted with desiccated coconut. These are prepared from balls of dough flavoured with spices like cinnamon and cardamom before they’re cooled, cooked in a boiling syrup before being dusted with coconut.

    2. Sosatie:

    Satay or sate – skewers served with peanut sauce, is one of Malaysia’s best-known dishes. Sosatie is the Cape Town version and takes its name from sate and saus (for spicy sauce). Chunks of mutton are marinated (mostly overnight) with flavouring agents like garlic and curry leaves and then pan-fried or grilled.

    3. Bobotie:

    Sometimes referred to as South Africa’s national dish because of how popular this dish has become. This casserole (sometimes served in restaurants in a cast iron skillet) features curried ground meat at the base with a layer of egg custard on top. The version I tried was served with a yellow rice and sambal as accompaniments.

    4. Biryani:

    The Cape Malay version is unique because it uses lentils along with meat. The spices are similar in Indian versions of biryani but the rice, lentils, meat and gravy are cooked separately and mixed together.

    5. Tomato Bredie:

    It takes its name from the Afrikaans word for stew (bredie). This stew is now eaten across the country but is believed to have been introduced by the Cape Malays. This spiced stew combines tomato, mutton ribs and vegetables that are cooked for a long time with seasonings.
