What started as a fascination with plant-based meat and milk alternatives has evolved into a broader movement that incorporates native Indian foods and traditional recipes. Indians are doing vegan their way, and it has transformed into a truly desi movement. Driven by compassion, environmental, and health concerns, choosing plant-based options is becoming a popular, sustainable, and delicious choice for many. Leading the way are family recipes and local ingredients, which are also low-carbon and farmer-friendly.

    In a way, we’ve just put two and two together, realizing how many of the foods we’ve been eating at home are naturally vegan or easy to veganize. These are familiar, comforting, and inexpensive foods that everyone in the family can enjoy. Dishes like dal-chawal, upma, undhiyu, pithla, chole, kadala curry, and many more are already vegan staples. India’s culinary diversity also offers ample opportunities to experiment with new recipes from different regions. For instance, my kitchen is mostly South Indian, but a Sunday breakfast favourite in our home is Bihar-style Aloo Puri.

    The exposure to and access to modern ingredients-along with the rise in popularity of millets and lentils-means people eating vegan are spoiled for choice when it comes to protein. Even ingredients like oats and quinoa have been seamlessly integrated into Indian recipes, like masala oats and quinoa khichdi.

    Brands Adapting to Changing Consumer Needs
    Brands are taking note of this shift and have jumped on the bandwagon. After an initial surge in exotic meat alternatives, many brands are now introducing plant-based versions tailored to the Indian palate. Tandoori chaap, plant-based “chicken” tikkas, biryanis, and keemas are exciting novelties that are easy to incorporate into meals for most Indian households.

    High-quality, local ingredients like chickpeas, pea protein, millet milk, and jackfruit have made their way into plant-based products, enhancing their nutritional profile while keeping costs competitive.

    Dining Out
    The hospitality industry has evolved, making plant-based options more accessible and tempting than ever. Innovative chefs are creating culinary experiences that highlight the tastes, textures, and even nostalgia of plant-based meals. India’s thriving street food and chaat scene has adapted well to plant-based eaters. With increased awareness, people can now choose from diverse options that were always vegan or ask vendors to customize dishes with minor tweaks. This latter part comes naturally to us-just like asking for sukha puri to finish off a plate of golgappa.

    For those seeking a world cuisine experience, plant-based options have skyrocketed. Fermentation, sous-vide cooking, and molecular gastronomy have resulted in plant-based dishes as complex and flavorful as their animal-based counterparts. From juicy plant-based burgers that “bleed” beet juice to dairy-free cheeses with real tanginess, chefs are pushing the boundaries of plant-based food.

    Restaurants and catering services have expanded their menus to include a wide range of plant-based dishes. This year alone, Indian restaurants introduced seventy new vegan menu items in the month of January. Catering to vegan customers is not only ethical and environmentally responsible but also good business. This surge in awareness, availability, and willingness to experiment has made eating vegan more enjoyable than ever.

    Driven by Health and Wellness
    A well-planned vegan diet can supply all the nutrients, vitamins, and minerals required for good health. Plant-based diets are often high in fibre, antioxidants, and phytochemicals, which are linked to a variety of health benefits. A healthy vegan diet, rich in whole grains, legumes, fruits, vegetables, nuts, and seeds, can provide an abundance of essential nutrients while being low in saturated fats. Numerous scientific studies have found that vegan diets can help prevent and manage chronic illnesses like heart disease, type 2 diabetes, and some forms of cancer.

    Indians have rewritten the “formula” for eating vegan. While we’ve leveraged a rich array of native recipes and comfort foods that have always been vegan, we also indulge in modern innovations like meat and milk alternatives tailored to our taste buds. And of course, there’s always the option of indulging in a plant-based burger that “bleeds” beet juice when we feel like it. Now, where’s my bowl of salad?!

    Nearly 2,000 People March To Advocate For Vegan Options In School Meals In Taipei

    Nearly 2,000 people marched through the streets of Taipei on November 16, calling on the government to introduce vegan diets into school meals. The participants, organised by the Sustainable Healthy Diets Research Institute, aimed to raise awareness about the environmental benefits of plant-based diets, specifically their potential to reduce methane emissions and support Taiwan’s sustainability goals, Taipei Times reported. The marchers carried signs with slogans and donned animal-themed costumes, promoting respect for life and encouraging others to adopt a vegan lifestyle.

    Chang You-Chuan, Director-General of the institute, explained that the goal was to make people more aware of the importance of a vegan diet, while also acknowledging the challenges in achieving widespread adoption. “It is encouraging that some in politics have been holding public hearings on such issues,” Chang said, but added that there is still a long way to go.

    Legislator Huang Kuo-chang of the Taiwan People’s Party, who attended the event, expressed his support for the cause, emphasising the critical role vegan diets play in global sustainability efforts. He pledged to push for related measures in the Legislative Yuan. Former New Power Party Legislator Chen Jiau-hua pointed to research from the UN’s Food and Agriculture Organisation, which links animal husbandry to significant carbon emissions, and argued that promoting vegan or plant-based diets is an effective way to reduce those emissions, reported Taipei Times.

    The event also saw discussions about Taiwan’s future carbon reduction goals, with Ho Tsung-hsun of the Taiwan Citizen Participation Association predicting that the government will revise its 2030 goals to exceed 30 per cent carbon reduction by 2032. Experts, including Chunghua Global Vegan Association consultant Chiu Chung-jen, stressed that vegan diets have a lower carbon footprint than meat-based ones and are key to achieving the government’s net-zero objectives, Taipei Times reported.

    The call for a no-meat day in schools was also voiced by Chang Chia-pei of Meat Free Monday Taiwan, while Pan Ting-tse of Kindness to Animals emphasised compassion toward animals, stating, “Animals are our neighbours and friends, and we should not kill our friends and eat our neighbours.”

    Wallis chose November 1 as the date, right between Halloween on October 31 and the ‘Day of the Dead’ on November 2. Since then, November 1 has been a special day for vegans worldwide to celebrate and spread awareness of veganism and its benefits.

    Ingredients:

    • Almonds – 1 cup
    • Jaggery powder – 3/4 cup
    • Water – 1/2 cup
    • Cardamom powder -1/2 tsp
    • Saffron – few strands for flavour
    • Any nut milk – 1/2 cup
    • Blending: Powder almonds to fine powder, do not remove the peel.

    Method:

    • Use a pan with a handle. Add all the above ingredients to the pan. Mix well. On medium heat, cook by stirring periodically.
    • As the almonds cook, the oils from the nuts are released, which is sufficient for the halwa. Cook till you get a halwa consistency. Transfer to a bowl while it is still warm.
    • Garnish with any crushed seeds. The halva can be stored for 3 days in a refrigerator.
    • You can choose to add fresh mango pulp (if it is in season) as a topping, as shown in the image.

    2. Vegan Sabudana Apple Kheer:

    Vegan Sabudana Apple Kheer

    Ingredients:

    • Any nut milk – 2 cups
    • Sabudana – soaked 3/4 cup
    • Deseeded & mashed custard apple – 1 cup
    • Cardamom powder – 1/4 tsp
    • Saffron – a few strands for flavour
    • Mixed seeds, roasted – For garnish
    • Soaking: Soak sabudana in water for 3 to 4 hrs.

    Method:

    • Heat a little oil in a pan and cook sabudana till they become transparent. Add thick nut milk, cardamom powder and saffron and mix well.
    • Let it cook for a few minutes. Be careful to not boil the milk.
    • Remove from the heat and add mashed custard apple.
    • Serve in bowls and garnish with roasted mixed seeds.

    When it came to her footwear, Jackson appeared to be wearing Stella McCartney’s Elsa Vegan Patent Slingback Pumps in a deep shade of red called Bordeaux. The shoes are faux leather, made of a polyurethane material in lieu of animal skin. This would made them an ideal footwear choice for Jackson, who is vegan and in 2022 was named ambassador for vegan brand KVD Beauty.

    The shoes feature a classic pointed toe and an adjustable slingback strap adorned with a sparkling buckle. The sculpted stiletto heel measures 3.5 inches, providing a substantial elevation. Neiman Marcus currently carries the shoes in this color for $860.

    Jackson appeared at Stella McCartney’s show last year during Paris Fashion Week, when she opted for a different double-breasted aesthetic including a minidress and peacoat; she complemented the outfit with reptile print heeled sandals featuring a gold chain strap.

    Veganism is really taking off these days, with more and more people embracing the lifestyle. And as it grows, New Delhi has welcomed a bunch of vegan restaurants, including People of Tomorrow. Tucked away in the chic Basant Lok market in Vasant Vihar, this spot is perfect for vegan lovers. It’s not just the food that’s vegan-friendly though-the whole place is designed with sustainability in mind. From eco-friendly interiors to the cutlery and lanterns, the vibe here is truly one-of-a-kind. We had the chance to check it out recently and dive into their delicious offerings, and here’s a little taste of what we experienced.
    We started off our evening with some of their signature cocktails. First up, we had the Bramble, a delightful mix of gin, java plum, and lemon, perfectly balancing sweet and sour notes-it was fantastic! Then, we sipped on the Paloma Of Tomorrow, a refreshing blend of grapefruit roselle, oregano, and lemon, which was equally delightful. Lastly, we tried the Miraflores, featuring pisco, sweet sherry, martini rosso, and maraschino cherry. It had a bit of a bitter edge at first, but it grew on us.

    When it came to appetisers, we kicked things off with the Akuri, a modern twist on the traditional Parsi dish. Made with scrambled watermelon seed paneer and served with a soft bun, it was pure comfort in a bite-so good that we finished it in no time! Then, we had the Won-A-Ton, their house-made dumplings in a tasty chilli, ginger, and umami sauce. They were soft, juicy, and steamed to perfection-dim sum fans, you’ll love these! We also gave the Tartare De Nasu a try, which was an eggplant tartare served with lotus stem chips and a scallion dip. Even if you’re not a big eggplant fan, this dish might just win you over!

    For the main course, we wanted to try the Mazeman, but it wasn’t available, so we went with It’s Bianging instead. This dish featured hand-pulled noodles tossed in chilli, garlic, and peanut sauce. It was hearty and full of flavour, making for a satisfying main. Although we only tried this, there are plenty of other exciting options on their menu like Tomatoes of Tomorrow, Ananas Carpaccio, Fatayer, and Alla Norma. If you’ve got room, definitely check them out!

    No meal is complete without dessert, and we ended ours on a sweet note with Eton’s Mess. This refreshing dessert had layers of vanilla bean custard, soft vanilla sponge, red fruit compote, fresh mango, and coconut oat streusel, topped with mini pavlova. It wasn’t too heavy and hit the spot just right.
    Overall, we had a fantastic time at People of Tomorrow. If you’re on the hunt for a top-notch vegan spot in the city, this place should definitely be on your list!
